The ghouls look black because of the cemetery mold that grows on their skin and the blackness helps them to hide in the shadows as they come out at dusk to dawn most of the time. They are the dreaded changelings when born look human as Pickman who was that way since the 1690's. He managed to keep himself from going through the metamorphosis till the 20th century. The humans that are taken become ghouls too after a time of exposure to them. Their contagion eventually causes the change in the poor humans taken by them to increase their noisome numbers. The new members still retain some human characteristics making them ever more horrible to the human eye and heart.
I read that the transformation of humans are not contagion, but an common genetic origin between ghuls and humenity, and being in their company just aweken their genetic metamorphosis, and its also work backward, if a ghul being in human company for long period
Ghouls feed on carrion must be old dead not fresh ones. They aren't humans anymore. So they are not cannibals. In the Lovecraft world being a cannibal can lengthen your life in a human and ghouls. ("THE PICTURE IN THE HOUSE") Possibly over the centuries you will lose your body pigmentation becoming albino as a side effect of strength and perpetual youth always with a certain taste you must have regardless of how much you have eaten of regular food. "Like eating like."
