I am definitely making this cake. My absolute very favorite cake is an old fashioned oatmeal cake. It has a boiled icing on it that you broil too. I went to Catholic School and our Caferteria Manager was an 80+ year old parishioner whose husband passed away when he was fairly young and her kids were grown with families and she said working was what kept her healthy and alive. Her name was Mrs Crowe and she cooked everything from scratch. She always served that oatmeal cake when she made Sloppy Joe's on Homemade sandwich buns. I am 60 years old and still remember the delicious things that she planned and cooked each day. She no longer drove but lived back the road from the church and Mrs Vittitoe, one of the other ladies who worked with her picked her up every morning at 6am. She started serving lunch at 10:45 and we had full cooked hot lunches every day. The only thing I remember her ever serving that was precooked was the little square frozen pizzas and on Friday she served the square fish cakes. Back then Catholics over the age of 12 years old could not eat meet on Fridays so we always had fish on Friday. I remember her making meatloaf with a brown gravy and she served homemade yeast rolls when we had meatloaf, she made chili, a beef stew with ground beef in it. We had homemade chicken pot pie, the sloppy joes, so many delicious things. There were 3 ladies that worked daily and then every day 2 of the school moms came in to help serve. Each student's parent had to work so many days a year. If you could not work your turn you could pay a small fee and another parent would come in and work your turn for you. My mom was a stay at home mom so she often worked a couple extra days a week for another parent who could not work their turn. Her pay helped to pay our tuition to go to the school. Mrs Crowe was in her 80s. I remember she finally stopped working at the end of the school year when she was 89. I has well into high school when she passed away. She a lovely sweet hard working woman. School lunches back then were nothing like what they served by the time our daughter went to school or even when Mark's mom worked in the cafeteria of the middle school she was at before she retired. She was a baker at her school. She baked either cookies, cakes or some type of bread daily. If they served hot bread then they did not serve a baked dessert. A long story to tell you the cake you baked reminds me of that oatmeal cake. There was a cake called a Lazy Daisy Cake that had the broiled type icing on it too as well as a Fruit Cocktail Cake. Both of those I believe had coconut added into the icing with the pecans. I placed a $75 order for some nuts that should be here sometime next week. I will have to try your cake when those arrive. I have a few chopped pecans but I do not think I have enough until those arrive. Enjoy your Saturday.

Looks yummy, going to have to try this. I have been baking some Italian cookies that have lasting abilities in advance of giving, only problem is they are almost gone, kids keep dropping by and of course I have to give them some for home.You should see there Christmas want list, stuff I bake and make.
I love it!!!! It's wonderful when the kiddos want our homemade goodies!!!! ( canned stuff, baked stuff, fresh stuff...lolol) What is in the Italian ones? I just made ( video coming) pecan roll...that you freeze and bring out as needed and bake. Mama always made them. They're basically butter, sugar, flour, pecans., vanilla , egg. @@ApronstringsGayJordan Pizzelles, an old family recipe which I cook on an iron and not one of those electric pizzelle makers, tried it, not the same at all, gave it away and It was not a cheap one, I use anise oil and not almond extract, in this particular recipe. 2 different kinds of biscotti, one I developed over a period of years, and one of my grandmothers from Italy, not sure if you have ever made biscotti, you cook them twice. A soft amaretti cookie, original recipe was in Italian, and broken Italian, mine always came out flat not like my grandmothers, after a period of time I discovered that you absolutely could not open the oven door while they were cooking or they would fall. And an almond cookie. Then I have to make the home made marshmallows to go with the home made hot chocolate mix, if you have never made marshmallows you must make them, I use a recipe that is not the egg white based one. Then they all want the home made worcestershire sauce, it is even better than the big name one, but takes three weeks to ferment, I have canned it before was was not really satisified with the flavor, it is good for almost a year in the fridge, I make double batches and it never lasts longer than a few months, it is great as a steak sauce. I am putting together a cookbook which I hope to give them all for Christmas next year, I asked them all and my grandchildren to give me favorite things I cook, as I make them I take pictures and will put a book together and get it printed so they will have their favorites, should be ready for Christmas next year. I remember giving one of my daughters the recipe for my fettuccini recipe, and her saying she did not realize it was so easy, some of the recipes will be easy other in the book not so easy.

( I'm sure you hear that often) When both of my kids left home, I made them a little recipe book of our favorite casseroles etc. My sons wife has used the fire outta it!!!!! @@ApronstringsGayJordan Been busy, I just made the marshmallows this morning, tried a bit of a new method, so I now have to re-write the whole thing with all the changes I have made over the years, which I won't be able to get to until after the holidays, I never give a recipe unless I make it following my directions, I know you are an experienced cook, but I develop and write recipes so the less experienced cook can follow and understand each and every aspect of a recipe, weather it be one I alone have credit for or one of some one else's I have made changes to. I let you know when I have done this, and will gladly let you have it.
Broiling is when you have the upper element in the oven on high...and you put the food within 5 to 7 inches from it....for a short time..watching constantly so it wont burn. Thank you for watching every video!!!!!! I love your comments!!!! God bless you!!!
