Open limit. Never measured to see where voltage is getting hung up. Didn't check gas pressures. Closed pulley, changed airflow. Then takes amp draw with door off. Ignored temp rise being out of spec.... wow.

From what your showing you have about a 90 degree temp rise? (70/160). Rating plate calls for between 25/65. Would it not trip limit yet again if not adjusted to be within the manufacturer's recommended temp split? Why is it your only concered with the max out air temp? Thanks in advance.
You can’t really get a good rise reading on the unit because you’re too close to the heat exchanger. The rise should be taken in the ducts which is not always available on a package unit.
Hold on your blowing at 155 return is at 70 degrees that’s a 85 degree rise the system is only rated for a 25-65 degree rise, you need to check the gas pressure that’s too high of a rise
More than likely they have zone sensors hooked to the tstats that sense the temperature in the designated spaces. The tstats are probably in an office or other space that only employees have access to so customers in the restaurant aren't messing with them

Fan motor don’t have a time delay to warm up the heat exchanger 🤔
You should be checking in the blower section for cracked on top of the burner they always crack there

Why did the fan come on before the heat exhangers got warmed up or was it set to on instead of auto ?
Because when u r off on limit the unit runs the fan to cool it down.
It went out on low plutonium.or bad flux capacitor.Or maybe you didn't get it up to 88mph.

That limit switch only looks for max temp, If it gets too hot it'll trip. Temp split doesn't really come into the equation.
