The bloodied horse probably refers to the speed of the growing followers of Christ, and the blood probably refers to the time when Jesus carried his cross, bloodied with the crown of thorns, or the persecutions of Jesus' followers.
Just because it could be made up by humans, doesn't mean it is. She did say there were humans who witnessed the disappearing of the sun. People have their own beliefs and you should respect that.
