If you dehydrate your zucchini about halfway before making the parmigiana, it makes for a much more gustoso/satisfying/hearty parmigiana as opposed to mushy parmigiana.
Making this now for my wife. She loves zucchini. I had a couple in the fridge and used my smallest baking dish for a single serve meal. I half baked it and will finish it off tonight. Not sure If I could have assembled and refrigerated until dinner time.
Thanks Alex! Depending on what type of cucumbers you have I would make pickles and/or make cucumber salad. I used to grow the smaller spiny cucumbers that were good for pickling.
I did something similar when I made zucchina parmigiana, but I added my zucchini raw after marinating with olive oil (and salt & black pepper) instead of baking it on the side. I also didn’t add mozzarella on the very top layer, so I’m glad that I did a few things that a chef has actually done. Makes me feel talented haha👨🍳 😅

I do this in the summer. it`s very good but I use my grill, it keeps the heat down in the house and tastes great

If you want to fry it, go for it. There isn't one way to do things. This cooking isn't a monolith.
