    Dig your videos! After I sear, i like to throw it in the freezer real quick for like 20 min. Stops the cooking and firms it up for cutting. 🤙🏽🍻

    Wow nice. How long can those blocks stay in the fridge (wrapped in clean paper towel) before they start to turn? TY
