I make Custard every morning, every day for my son, he love it so much since my mother gave it to him when he was one year old when I took him to Nigeria🇳🇬 my son is 13yrs old now and he is still taking custard. Custard, semolino and Pap are one of the easiest meals for me to make, always comes out perfectly! The secret is understanding the water ratio and using very hot boiling water....I always add some oil to make my semolino nice.

My method for Semo requires a lot of elbow grease. I start stirring from cold on the cooker till it comes together, slowly at the start then speed up as it thickens and turns opaque. Draw everything towards the centre, add hot water, cover and cook for 2-5 minutes depending on quantity: this increases the elasticity and makes it more malleable#gluten. Stir into a ball and serve. PS, I add a pinch of salt at the start.
I don't use cold water for Akamu/Ogi/Eko. I use a small amount of warm/tepid water to start.
My custard success rate 50:50.

The custard/akamu with akara is Saturday breakfast for many families. But I like to add a cocoa beverage like Milo, together with milk. Some add fried, ground peanuts.
My hands are down in this o. Akamu has never disappointed me although it's been ages I made it and my kids don't like

I failed so much at making akamu/custard that I gave up and hv to make use of a pot for mixing so if it doesn't form well I can try my luck by cooking it on a burner.

I don't even know why a lot of people says it difficult for them to make custard or akamu. Every thing depends on the amount of water used to mix it at first. Just as you said room temperature water.
Dinma we need to conduct a deliverance. 😂 Because I tell you, the number of reports I've received about these 3, with akamu being the most feared is alarming.
To think that I ruin custards more than akamu, I've only ruined akamu once when I was learning how to cook, I tried missing with hot water Instead of room temperature water to see what happens🤣🤣🤣🤣.
My mum usually make akamu so maybe that's why I was used to it, custard is mostly for babies👶👶🍼 🤣

Ahhhh a few weeks ago, custard decided to make me embarrass my ancestors😭😭😭 and I felt I was good at making pap, unfortunately, it even embarrassed me the most 😂😭 since then. I banned making or taking them automatically😪
