Its a tough recipe indeed to make. I remember when I first made them, I had to troubleshoot out how to get the right amount of rise and crumbled craquelin exterior look. hope my recipe helps!
I love your recipe! tried combining the coffee custard with the whipped cream, but it failed and it became very watery and had these lil white lumps in it, anyone any idea why went wrong? Still a beginner in baking here hehe
Hello thanks for watching! Im sorry it didnt come out as planned. I would try cooling the coffee custard a bit more until room temp before adding to whip cream. If you need to cool it for more than 30minutes you can do that. Its possible it was still hot when mixed into the whipped cream causing the milk in the cream to curdle and form lumps. I hope that helps!

is it possible to use actual espresso instead of powder? could i use less milk then?
you could it should work I would use less milk and make sure the expresso is cooled! hope that helps
