Is rock the only medium for growing I am new to the subject. I have seen a lot of videos of hydroponics where finer grain medium

Rock provide a surface area for the bacteria to grow on and give the plat structure to grow upon (root system to grow down into). You don't want to use anything less than 3/4" gravel or you can use clay pellets. I don't like using anything smaller, it has a tendency to become impacted with matter (dead roots and fecal matter). It can then become anaerobic. Hope this helps.

Can wool be used as the base that your plants grow out of ??? Instead of the pebbles ?

I don't see why not. Just as long as you use it to start the seedling.
