Churros
Ingredients
1 cup (250 mL) water
6 Tbsp (90 g) unsalted butter
2 Tbsp (25 g) granulated sugar
½ tsp (2.5 g) salt
1 cup (150 g) all-purpose flour
2 large eggs
vegetable oil, for frying
cinnamon sugar, for coating
Directions
1. Measure the water, butter, sugar and salt into a medium saucepan and heat this over medium-high heat until the butter has melted and the water begins to simmer. Add the flour all at once, reduce the heat to medium and vigorously stir the mixture with a wooden spoon until it comes together in a ball and cleans the sides and bottom of the pan, and then keep stirring one minute more. Remove the pan from the heat and transfer it to a mixing bowl (if using electric beaters) or in the bowl of a stand mixer fitted with the paddle attachment.
2. Beat the dough for 1 minute, to cool it down a little. Break the eggs into a dish and whisk them lightly. Add the egg in three additions, waiting until the first bit of egg has been incorporated before adding in the next. Spoon the warm dough into a piping bag fitted with a medium star tip. The dough should be used within an hour.
3. Heat enough oil in a heavy bottomed pot to come up at least 4-inches (10 cm) to 350 F (180 C). Hold the piping bag straight over the pot (not at an angle) and pipe in a length of dough about 4-inches (10 cm) long and snip the end of the dough portion with scissors so that it drops gently into the oil. Repeat a few times but do not overcrowd the oil (about 6-8 churros). Cook the churros for about 4 minutes, turning halfway, until golden brown. Use a slotted spoon or spider to remove the churros to a rack or a paper-towel lined plate to drain. While still warm, toss in cinnamon sugar to coat. Serve immediately.
Hot Chocolate
Ingredients
¾ cup (175 mL) water
¾ cup (175 mL) 1% or 2% milk
¼ cup (60 mL) instant skim milk powder
3 Tbsp (36 g) granulated sugar
5 oz (150 g) dark chocolate (semisweet or bittersweet), chopped
½ tsp (2 mL) vanilla extract
pinch sea salt
Directions
1. Bring the water, milk, skim milk powder and sugar up to a simmer in a saucepan over medium heat, whisking regularly. Once it begins to simmer, add the chocolate and whisk constantly until the chocolate has melted and the hot chocolate starts to bubble (it needs to reach a full simmer to thicken). Whisk in the vanilla and salt and ladle into demitasse cups or small heatproof glasses and serve.

Looks delicious! Quick question though, why do you use half milk half water in the hot chocolate recipe and then add milk powder to the mixture instead of just using all milk (without the water and milk powder)?

In Bosnia, we make a similar thing called tulumba, instead of chocolate, we use syrup. Definitely going to try the chocolate version

Hi Anna, I love your videos. This recipe must be delicius but, I am from Spain and I am sorry but that is not the way to make authentic churros. We don' t use butter, eggs and never ever no no no CINNAMON !!!
The authentic recipe is only with flour, water , salt and oil. If you want you can cover the churros with white sugar once they are fried. Thank you for your recipes, you are a real inspiration.
