This time our gastronomic pursuits have brought us to the largest North Indian state, Assam. Well known for its sprawling tea gardens, national parks, paddy fields, the mighty river Brahmaputra and an artistic heritage, Assam has emerged as a popular tourist destination. Its vibrant cuisine makes it an important food destination for foodie travelers. Our food explorations in Assam began from the scenic place called the Chandubi lake situated around 64 km away from the capital city of Guwahati.
Surrounded by forests, tea estates and small villages, this calm and picturesque area is a popular tourist spot. The lake was formed as a result of the submergence of a part of the forest area during the devastating earthquake that had hit Assam in 1897. It is a rich habitat for different flora and fauna. Visitors can go fishing and rowing in the lake.
At Chandubi we visited the Chandubi Jungle Camp along with our hosts Chayanika, Sisir and Risha to savour a traditional rustic meal prepared with local ingredients. The scrumptious lunch spread at the retreat camp included the tupula bhat, omita khar, Assamese style chicken curry, tangy fish curry, aloo pitika, koldil bhaja, bilahi pora and dal. It was a simple and gratifying meal that introduced us to some new ingredients like khar and thekera whose details can be found in the video.
In the evening we all gathered together to prepare bamboo chicken, bamboo pork and barbecued pork. Chicken or pork cooked in hollow bamboo stem is a popular delicacy in this region that has caught the fancy of the gourmet crowd from near and far. Although initially it appeared easy with the minimalist marinades and all but it wasn’t, as it needs practice to master this style. The outcome was delicious. We particularly loved the bamboo chicken and bamboo pork.

thera was visa2explore,,there was high way on mu plate by rocky and mayur...there was davis been here..however i was disappointed with the girl who received david..she could not guide him properly ..delhi food walk is doing a great job though... i must admit..

Assamese people and us uttadakhandi people have quite some similarities...I love how they eat less spice and healthy stuff
I see many close minded people in the comment section who are not ready to accept different cultures.
They have problems with pork, usage of less spice, usage of bamboo for cooking...
It's not like he's forcing you to eat these.

In places like Bengal Assam orissa, there is multicourse meal - we start with small portion of bitter vegetables, mashes, then some other gravy, then dal, then fish or meat, lastly relishes or sweets.

All the guys/girls from Northeast will always stay in groups, eat in groups n are less interactive, but I always try to interact with them n understand why they are doing so.. I must say they not loud, very disciplined n if you set an expectation they will adhere.. be it Assamese Nagaland Manipur n Arunachal Pradesh.. I never interacted with people from Meghalaya Mizoram Sikkim n Tripura
Stay in groups kyunki they love talking in Assamese rather than other languages..same u ll find among malyali tamil also..but Assamese guys are Indeed soft spoken and they form closed circles..

I'm from Guwahati n lived all my life but didn't know what Guwahati actually meant and I'm sure most Assamese don't know 😂. Because those are I guess ancient Assamese words. Thank you for that sir.
Only Gauhati'ans don't know traditional Assamese words due to the metropolitan life. Rest of the Assam knows excluding the Bengali dominated areas.
