Those secret rooms with nothing in there have a purpose after you beat the levels they are in. After beating a level, a lap 2 portal will appear in them after you activate pizza time in that level. Going in the portal will make you have to do the escape a second time, but you have a higher chance of getting an S or P rank

The secret room you saw at the start of the level is actually the path to lap 2, which you need to do to get S or P rank. Edit: p.s. to actually unlock lap 2 you need to finish the level normally first then after beating the level for the first time the lap 2 portal will appear
If you read this Wario the areas where you thought were secrets those are lap 2 portal areas which are only accessible when you beat the level and you have to enter in it during the escape.
