- Does this hamburger trick really work? Watch and see my semi-scientific approach to this hamburger hack and if it really works for keeping a hamburger from shrinking on the grill.
In this video I test the hamburger hack where you use your thumb to press a dimple in the top to keep your burger from shrinking.
Also in this video, I show my method for grilling burgers to get juicy hamburgers that are not over cooked. Note my methods, no pressing the burger and squeezing that juice out during cooking.

The dimple is supposed to keep the burger flat / from losing its shape not to keep it from shrinking. Common sense tells you if you have solidified fat in the meat and that fat melts with cooking the burger will surely shrink some so a dimple could not possibly prevent that. However since the burger wants to swell from the moisture released and you add a dimple it should swell a bit in the middle to match the sides giving you a more evenly flat burger instead of a bloated ball of meat. So on your experiment you were looking for a result that was never at issue.
Why when you cook frozen burgers it stays flat?

I thought the purpose of the dimples were so they don't dome up
If you put them on the grill dimple up, they will fill with juices and flare up when you flip.
Let me know what you think. Do you think the thumb trick works for keeping hamburgers from shrinking? My opinion based on this test is that when you push in the middle, you make the diameter a little bigger to begin with, and that is what gives the illusion of the burger not shrinking as much. You agree?

Pushing the center isn’t supposed to keep them from shrinking, it’s to keep them from puffing up in the middle. The premise of your experiment was flawed.
I’ve never had the dimple thing make a difference or not. They shrink up and get puffed up, regardless of a dimple

Good information. I have the same problem, burger shrinking. I was told by a famous fast food restaurant manager that everyone uses finely crushed bones in the meat, that is why patties don’t shrink.
So the test is inaccurate cause you reformed the patty after you thumbprinted it... you said it grew by a quarter inch , so in theory if you lost a quarter of inch in shrink the thumbprint would have negated the shrink
Kris, thanks for the comment. I think we are saying the same thing. My conclusion was that the thumbprint itself doesn't keep the burger from shrinking, it just pushed it out bigger to start. You could do the same just by making the burger bigger in the first place to account for the shrinkage.
@@georgelabarge4985 Actually by putting the dimple in the burger you ARE making a bigger burger. The experiment was altered when you reformed the dimpled burger. That's the whole point. To keep a 4" 1/4 pound burger from shrinking during cooking make this dimple in it. Finished product, 4" 1/4 pound burger. Not all of us have gorilla hands! LOL
