    【Ingredients (for 1 serving)】
    1. Authentic Japanese Mazesoba (Oiled Ramen Noodles)
    ・4 oz (110g) Ramen noodles
    ・A pinch of Salt
    ・1−2 tsp Sesame oil
    ・3.5 oz (100g) Ground pork
    ・1 tsp Doubanjiang
    ・1/2 tsp Sesame oil
    ・1/2 tsp Grated ginger
    ・2 tsp Sake
    ・2 tsp Soy sauce
    ・1.5 tsp Oyster sauce
    ・1.5 tsp Sugar
    ・1/2 tsp Chicken stock powder
    Toppings
    ・Chinese chive
    ・Green onion
    ・Nori seaweed
    ・Egg yolk (or Onsen egg)
    ・Grated garlic
    ・Dried bonito flakes

    2. Chicken Mazesoba (Oiled Ramen Noodles)
    ・4 oz (110g) Ramen noodles
    ・Dried bonito flakes
    ・1−2 tsp Sesame oil
    ・3.5 oz (100g) Chicken
    ・Salt and pepper
    ・Minced 1 clove of garlic
    ・3 tbsp Sake
    ・1/2 tbsp Mirin
    ・1/2 tsp Oyster sauce
    ・1/2 tsp Chicken stock powder
    ・A pinch of Salt
    Toppings
    ・Green onion
    ・Black pepper

    Both recipes very nice! Roasting nori greatly improves taste, bonito flakes can be made finer like you do or in a mortar, good sesame oil is divine, a gift to the kitchen. Arigato!

    Thank you so much for your recipes! Unfortunately, I cannot eat any wheat or rice noodles because of some health troubles. Hoping to try this dish with ramen noodles one day, but what if I cook Mazesoba with some soy or buckwheat noodles? Would it taste good, or this is a bad idea?

    My fiance loves mazesoba (it's his favorite). I had never heard of it before meeting him and I was really confused by the name first because I thought it was "maze" like 不味い and wondered "why would you want disgusting noodles?!", haha. I'll try making some "disgusting" noodles for him when I'm back in Japan next month.😜

    I arrived knowing that Japanese noodle without something drink are called
    Maze soba a~! Thank you for teaching.
    I like both of them! 💛 ⭐️
    Noodles tend to have a fact that everybody makes very easily. Instead of the aspect, it is also easy to lack of nutrition.
    But they you introduced are not.
    At soboro noodle i like all toppings so when i eat it, as my characteristic i do not add egg york. To be perfect meal i may run to my refrigerator then substitute into kimchi
    [gimchi] or cucumber or pickled radish.
    **My taste is complete.**
