Delicious Rice Gelato recipe - Gelato di Riso

  • I've only had Rice Gelato (Gelato di Riso) once, in Florence, Italy. A Subscriber mentioned this to me and I just HAD to make it. With instructions from a famous Italian dessert chef, we are going to get on it today and make delicious Gelato di Riso or in English, Rice Gelato.

    This looks good, and it makes my mind go to horchata. A video for horchata ice cream would be much appreciated.

    Wow, that sounds awesome. Are you also working on other ice creams including grains? Would love to see a sweet corn gelato or ice cream recipe

      Yeah I don’t mind them occasionally, just wasteful and these days unnecessary. I find them best in vanilla only.

    Interesting!!
    You know how I am. I have a friend with a chicken coop.
    I might use less egg though, because there is still starch from the rice. I always add some powdered milk and a touch of light corn syrup.
    We will try it.
    Right now next project is sweet corn ice cream.🌽

      I made fresh corn ice cream around Memorial Day this year. Fresh corn is available in May-June here in Florida. I plugged the numbers into the ice cream calculator, made the ice cream to the specs, and it turned out delightful. Lots of work, though.

    Thanks, never had that before even not in Florenz. I guess cinnamon will be also a good flavor in this Eiscream, as we are adding to Milchreis.

    So I tried this recipe but my rice didn't cook through while the cream completely dried out. I simmered on the lowest of low flames and then didn't know what to do. Tried simmering it a few more minutes in the milk mixture but even then it didn't completely cook, and I was afraid it would evaporate too much. So it stayed a little crunchy but even so, it came out delicious 😂
    When making rice pudding they usually recommend to cook the rice in water first. Maybe that's what I should try? Just afraid that too much water will later ruin the ice cream...

      You could cook it in milk? At least it’s cheaper than cream. You can use whatever milk is left for the recipe!

    Hi Nick!! Good video!. In Mexico we have horchata Flavour ice cream. Have you tried adding orange zest and cinnamon? It will give a lovely twist to the final flavour.

    Wow... I love this channel, will be trying this😀 Do I need to make any adjustment if I am using a Ninja Creami? What's the fat content according to the ice cream calculator? Rice itself is not a strong flavour but as you said UK childhood memories..🤣 Thanks so much

      You would be much better to keep the cooked rice aside and add that after spinning.

    May I ask the % of rice for whole batch? Do you use 20 % rice for whole 1L batch? I mean 200g for 1000g of base?

      Yes as this is an unflavoured base as I said in the video. The rice is an inclusion only.
