SWEET POTATO CORNBREAD - OUTDOOR OMNIA OVEN CAMP COOKING

Ingredients:
3 Sweet Potatoes, cooked
2 Boxes of Jiffy Cornbread Mix (each box is 8.5 oz or 240g)
1 can (14oz or 396g) Sweetened Condensed Milk
1 egg
⅓ cup Half and Half or Milk
1 stick (4oz or 113g) of Butter, softened
¼ cup Brown Sugar
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 tbsp Honey
1 tbsp Vanilla
1 tbsp Cinnamon
1 tbsp Nutmeg
1 tbsp Ground Ginger
Instructions:
In a large bowl, use a hand blender to mash the sweet potatoes until smooth.
Add the cornbread mix to the mashed sweet potatoes and stir to combine.
Pour in the condensed milk and mix thoroughly.
Incorporate the half and half, egg, brown sugar, baking powder, baking soda, melted butter, and salt into the mixture, blending well.
Add the cinnamon, nutmeg, ginger, honey, and vanilla, and mix until all ingredients are well combined.
Pour the batter into a well-greased pan, ensuring it is evenly distributed.
Bake at 200°F for about 45 - 50 minutes, or until a toothpick inserted in the center comes out clean.
