      @@Stevesnumber1peppers I just realized that I gave you a previous response on email instead of doing it in the comments thread. So I thought I would answer it here, because I am sure others might have seen my "mistake."
      Y:ou are exactly correct....I made a mistake. In fact, two of them. Sometimes, when I am shooting a video, I am too consumed by what I will say next and forget to pay attention to what I am doing. This partly because I do not write scripts or notes; I just start the camera and start talking and doing. Of course, another reason MIGHT be that I am an old man and forget a LOT of things. LOL.
      As I previously told you, I almost never "play to the camera" when I am doing productions work, even though I video EVERY minute I spend working in the kitchen. In this case, since it was non-consumption samples, I thought I could do both. Wrong. This mistake caused me to have to completely redo those three sample bottles before the submission. Lucily, I got them right.
      Thank you for paying such close attention to the video. I hope you continue to watch an old man who simply loves what I do. After so much illness in the later part of my life, this hot sauce business has given me a new lease on life. Thank y ou Steve, and thank you all.

      Love your video, it’s given me some inspiration to try to expand my range (I’m a beekeeper in the uk) I’ve done some lovely garlic honey sauces and been trolling RUclips for a hot honey sauce ideas. I’m even tempted to try to grow the peppers in my polytunnel… is it recommended to try a few different pepper strengths … perhaps like you ghost pepper for hot, I do like those apricot flavoured harbinaro but almost too hot for me lol… a side swipe with it on the side of my plate is enough for me lol.

    Thank you for sharing this! We have just made our first test of hot honey. I used dried jalapeno flakes from peppers I grew last year by simply letting them "steap" in the heated honey for 10 minutes. It turned out good. Your wisdom in creating an "oil" is awesome. Plus, I didn't know how to do that. It will come in handy when making my pepper jellies also. New subscriber and anxious viewer here!! Thank you again for sharing your technique and wisdom!

      Also, what tool are you using to check moisture content throughout your process? I use a refractometer for my honey itself before I extract it from the comb. Would I use the same tool for this whole process or a different tool all together? If you recommend one, please psot a link so you get credit when I purchse it. Thank you again.

      @@fullproofbeekeeping Thank you for your comment. Beekeepers all over the country are using my oil for making hot honey. It is the only way to maintain the character and thickness of real honey.

      Oh, I thank you for watching As an old man, who should have found learning to create video content difficult, I take sone degree of pride in the videos that, in the aggretate, make uo my channel. I have a fair depth in the content matter, so I just turn the cameras on and start talking talking to them like tgey were friends that stopped me on the street corner and asked me how I do it. LOL!       That is great! I have actually made it that way myself. I absolutely love hot honey, no matter how it is made. Don't forget to try it in fresh apples and freshly cut peaches. But the number one perfect combination.....hot honey and ice cream! Delicious!

    Mr.Phil! I noticed you made a mistake in dosing the vinegar & capsaicin oil.
    In the third jar, you put only 1 scoop of vinegar.
    In the second jar, you put 3 syringes of capsaicin oil. This will affect your test results!

      Very good catch! LOL. I had to redo the sample jars after watching the raw footage later that day. I typically only do videos with "non-commercial" products for demonstration. This was an instance where those samples were real.
      My entire manufacturing process is video taped on every batch. I often scan over the videos before completing the batch release report. I do, on occasion, catch an error.

      I have considered making a video, but this is a process I need to protect. I will give you the rough outline.
      The peppers were split down the middle, exposing the inner skin layer. I then used a razor blade to scrape the puddles of capsaicin oil from the inner skin of the pepper, collecting it in a vessel.
      The remaining peppers skins were squeezed in an apple juicer to extract the remaining juice. Both juice and oil were weighed and mixed in a ratio that I expected would make a remaining fluid with a heat level of 1 million SHU. I was off a little...it tested at about 1.2 million.
      I have recently developed a much faster and much safer way to mechanically remove the oil. Unfortunately, I can't discuss this in detail.

    Doesn't the vinegar increase the moisture content? Also, you mentioned you put honey into a vacuum chamber to lower moisture content. Would you recommend doing that? I liquified peppers, squeezed the juice out of it, reduced it to

      That is a very good water content. The vinegar will slightly increase the moisture content, so you must start with dry honey. I test moisture content on every batch I run.

    Have you ever mixed honey with hot sauce? I have been experiementing with mixing my hot sauce with honey and have had good results but I am not sure how it will hold up long term. I am thinking it will need to be refrigerated once. The pH is reading at 3.7.

      I actually do use honey in several of my hot sauces. Sauces that include honey are perfectly fine and last as long as any, as long as they are pasteurized. I think honey is a great way to sweeten sauces. I would suggest that you use real honey, but try to find an inexpensive grocery store brand for making sauce. Save that great, local stuff for better uses.

    Hello Phil, I enjoyed the video and I subbed. I'm wondering does the honey have a tasty pepper flavor using this method? Also one downside I see with this method is the pasteurization does reduce the enzymes and nutrients that many people associate with raw honey. I watched your video on How to Make Fire Honey. How are you controlling the moisture on that recipe? I tried that method in the past and my honey became liquid like water, greatly exceeding acceptable moisture content, afterwards I learned that dehydration is a reasonable solution. Good info though.

      Thanks for your comment. The honey has a wonderful spicy taste. I just love the taste.
      Avoiding excessive moisture is clearly an issue. In previous recipes, I used a vacuum to reduce the moisture. Now, as seen in this video, I add such a small amount of capsaicin oil that it does not increase the moisture content.
      Once you add something of substance to honey, it fits the FDA definition of "adulterated" or "processed." In that situation, pasteurization is required.

      I only harvest from ghost peppers. They pool the most capsaicin oil. I simply vary the amount I use to control heat level.

      The firefighters made salsa one time at the helitack base and when I got back in with the Helitender (fuel/equipment rig) they left some for me. The batch they left was not super hot but very mild and flavorful but even at that my lips swelled from what I imagine was the capsaicin since I’m so allergic to it when they roast the peppers in the barracks/kitchen; runs me out of the building due to respiratory issues.

      You will see many videos where people use crushed and powdered peppers to provide the heat for fire honey. I have never been able to do that successfully. It always forms a floating layer of pepper. Some also attempt to infuse the honey by soaking while or ground fresh peppers in the honey. When this is done, the honey will get very water-laden, unless you have a way to dry it. Honestly, my capsaicin oil seems to be the best eay. Thank you.

      You are EXACTLY right! I did do that. After reviewkng my footage, I was forced to completely re-do the submission samples. Many people caught that mistake. 🤣
      You can, in fact, use my capsaicin oil to make hot honey at home. I sell a TREMENDOUS amount of thus oil, and I expect (actually, I know) that a good portion of buyers are using it for that purpose. In fact, I sell this to many beekeepers who use this to make hot honey for their own customers sales.

    I have been mixing chili oil and honey for many years to add flavor to food. I'm not sure what all of this hot honey fuss is about. Simply take s hot chili oil and mix it with honey before applying it to your food. What is all this technical discussion about. Mixing a good chili oil with honey tastes as good as "hot honey" I have purchased. I never understood why people are mixing dry pepper flakes in honey to make "hot honey" lol.

      @@MrPhilsAlabamaHotSauce That's what I thought, but people are paying $10+ dollars for it at the store and also have recipes of putting dry pepper in honey with vinegar and heating it up. I have been buying a good chili oil from an Asian restaurant near me and have been mixing with honey for over 20 years. Now I hear coworkers and friends talking about it like this is a new revolutionary and complicated creation. So I wasn't sure if what I have been doing was considered hot honey. My mixture tastes much better than any of the $10+ store brands I have tried. Plus I can get the exact heat level and flavor I want by changing what chili oil and honey I buy.     I don’t care for anything hotter than watermelon but this is interesting.
    Do you make capsaicin oil for different varieties of peppers?:
    Ghost
    Jalapeño
    Ancho
    Habanero….?
    If not, why just Ghost?

      I use Ghost peppers because of the interior construction of the pepper and the amount of oil in the pepper. I remove the oil with a mechanical method, so interior geometry is important.

      No, not at all. The honey maintains all of its character, thickness, and taste. It is an absolutely wonderful flavor and really enhances the flavor of foods, with the addition of a littlr zip from the pepper. Thank you for your question.

      Oh, sorry. I misunderstood. No, it will not change in character at all. It continues to be beautiful, runny honey. On the heat issue, this honey is not boiled. It is heated to 140F to kill any yeast in the honey, to make it easy yo mix, and easy to pour. Heat will not produce any poisons or toxins. The resistance to heating honey is driven by the fear that favorable vitamins and minerals might be destroyed in the heating process. There is some valadity to that concern, but ir is an FDA mandated step if anything is added to the honey or uf it is processed in any way. Believe me when I say this Fire Honey us delicious, nutritious, and absolutely amazing! Thank you again.

    This guys saying putting raw peppers in honey, makes it subject to pathogens, but then he says numerous times that honey is fighting off pathogens, and it even cannot get pathogens. And I think people enjoy the thinner consistency that you obtain when putting raw peppers in your honey. It tastes better and it spreads better. I also see bottles of the cheapest form of honey. You can buy in the background. Cheap store brand clover honey. And we all know local raw wildflower honey taste the best. He’s heating the honey, which is definitely a bad move. Vinegar is a bad move. And capsaicin oil is a bad move. Heating any of this stuff is a bad idea. Just put some raw organic citrusy fruity floral, flavored peppers and some local raw wildflower honey you’re going to get the best flavor and consistency. It’s raw it’s organic it’s homemade and it has the best flavor. You can’t beat that. He’s literally trying to brainwash you. There is absolutely positively no reason making hot Honey has to be this complicated. It’s extremely simple extremely safe and extremely delicious. I highly recommend you do not use this method or even attempt it. Some people care more about money than the quality of their product. We all know that.

      @CapnSaysin Well....where to start. I do use mixed source honey for sauce recipe development, and often use it for applications where the final product will pasteurized and is only used as a sweetener. I continue to purchase 2 to 3 thousand pounds per year from a husband and wife beekeeper duo for ALL products that carry the name HONEY.
      Honey is only shelf stable due to the low water activity, high sugar content, and low pH. To package ANY honey product shelf stable, you have to maintain a low pH and low water activity. The moisture that comes from fresh peppers raises both the moisture content and the pH due to dilution. When using fresh peppers, you must do SOMETHING to lower the pH. Vinegar does that. It is used in almost every commercial hot honey.
      Using capsaicin extract does prevent increases in pH and increased water activity, but extract imparts a bitter taste. I use capsaicin oil, mechanically removed from peppers. No solvent is used to extract the oil.
      I can't teach you about food safety regulatory requirements in the comments of a video. The video shows what it is. The methods are solid. The technique shows how you could do it if you want to use fresh peppers to make this. I make it with capsaicin oil for honey sold in commerce.
      As to brainwashing, I don't even know where that comes from. I certainly want to make money on the products I sell. That is sort of the objective. The good part is simple; if you prefer to do it a different way, then do it. Everyone who watches my videos can do the same.....as they please. You can even come into the comments section of a video and trash it if you choose. Maybe is makes you feel some sense of accomplisbment. I will not delete your critique, and I would welcome you to do fhe same with other videos.

      You clearly don't know much about this subject and the guy making the video. He is an expert at this and is very free with his information. I have think you a tually didn't watch the video. Most of all, this is a nice guy and you are a sick head.
