I was chatting with someone who had an exclusive VIP tour of Lagavulin back in 2018, where they were tasting these limited edition 20 + Year Olds, all partially matured in rejuvenated casks. The guide explained that after shaving back and re-charring, they were seasoned with sherry! Indeed, these Lagavulins were dark reddish and had red fruit and spicy flavours. So, are all Lagavulin's rejuvenated casks re-seasoned with sherry? Well, from your tasting notes of this 10 YO, it seems not! Pencil shavings, Lemon, dry, apples and spicy --- indicate having been shaved back and re-charred only. Jason, I trust your tasting notes and you have given no indication of any seasoning in sherry. I have written to the distillery / Diageo for further clarification but am not holding my breath for detailed information from them.
