Gundruck is probably the most popular and loved food in Nepal. It is very authentic to Nepal and enjoyed by all ethnic communities in Nepal from terai, hills to mountains. It is dried fermented leafy vegetables, made generally from mustard green leaves (rayo ko saag), radish leaves (mula ko saag), cauliflower leaves ( Kauli ko paat ). It is one of the famous foods in Nepal. It can be made as a Curry or as Achar.
It is served as a side dish with the main meal and is also used as an appetizer. Gundruk is an important source of minerals particularly during the off-season when the diet consists of mostly starchy tubers and maize which tend to be low in minerals.
Ingredients for Perfect summer recipe for Gundruk ko Achaar:
Ingredients
1 bowl Gundruk
1/2 cup green Onion (chopped)
4 cloves Garlic Chopped
1 small size Ginger Chopped
1 tsp Cumin Seed (Roasted)
1 big boiled tomato
5-6 tsp Dry red chilies (Roasted)
½ tsp Turmeric powder
3 tsp Roasted mustard oil
1/2 tsp Fenugreek seed
Salt to taste
1/2 cup Coriander
Pure Mustard Oil (or any vegetable oil)
