Seven years ago, Robin convinced me to take a leap and register PUL as an official business. Happy birthday!! So nice to see spanakopita here as we call it in Greece!! My grandma's tip is to add a bit of rice or couscous or something like that to your filling ( just a handful, depending on how much you're making, no extra water and no need to fully cook it, it will cook in the oven), to absorb the extra moisture - so instead of the chickpea slurry I'm guessing - though this and tofu add protein to the mix, such a good idea. She always adds leaks and onion to the filling, it gives it sweetness. And of course you can do this with other herbs/veggies too.🤤🤤
