Tahdig - The Cooking Show (Farideh + Her Dad)

  • You know you love Farideh, now meet her dad: Farideh and her father Manouch make Persian steamed rice with tahdig, the crispy golden crust from the bottom of the pot. Farideh prepares the rice by soaking it and boiling it till semi-cooked, while Manouch chimes in with his tahdig tips and tricks. Together, they add the partially cooked rice into a pan lined with olive oil, butter, saffron, and turmeric. The result is perfectly fluffy rice with a crispy, savory crust. Manouch approves.     I was married to an Iranian for 12 years, his Mom taught me to cook Persian food. I love the cuisine. Such nice, beautiful people. Most Iranians love the U.S.

    Every Persian Dad ever! I can’t🥰. I don’t have one but I married one, with two children who love their food and BOTH parents. Love is full of good food! Persian food culture opens up love, family and extensive, extended love for people who are Iranian, and those who love them. Video of kindness and light. Too cute.

    I really hope Munchies paid Farideh's dad for his appearance. He contributed a lot of value to this video and this trend of home cooking videos lets multimillion dollar corporations make lots of profits off 'free' labour from the families of workers.

    I love tahdig so much that it’s a long running joke I’m naming my first son Tahdig. I grew up having it with crispy bread base more often than the crispy rice, but both are delish 🤤

      That's actually an Iranian thing. There are things that have some sort of aura of respect around them. For example, you should hand a book with both hands. Rice, bread, pomegranate should not be wasted, not even one grain/seed. For pomegranate, they say, there is one seed in it that belongs to heaven and you should eat every one seed b/c you don't know which one it is. lol!

      @@ladygreenlife Good to know that. Also, about the book, even in Bengali Hindu tradition, we are supposed to give or take a book with both our hands. It is also wrong to drop a book on the ground or tread on it.
      I think in the end, all cultures and traditions have one true, primordial source.

    People all around the world love when the rice makes the crust! Here in Italy, we love when our "risotto alla milanese" has the crust! In my family we literally fight for the crust...
    In Spain, a proper "paella Valenciana" shall have the crust!

      Yes, in Catalan-Valencian we call this crust "socarrat" which means burnt.
      Funnily enough, "paella" literally means just "pan", but since paella is cooked on a pan the name stuck.

    My grandfather was Persian (though you'd never know by looking at me lol) and just passed this year. One of my favorite memories was when I made the rice for our Baghali Polo and it got his approval :)

    In the Philippines we call the crunchy burnt rice “Tutong” and I love it! I will definitely try Tahdig!!!

    Holy crap, she was right around the corner from me! I grew up in Hyattsville, then moved to Harwood, then finally my family settled in Chesapeake Beach. Had a friend in Davidsonville so spent a lot of time there. Parents were married at the Holy Family church off of 424, and the one across the street makes the best peach pies for the yearly peach festival. Wow, I wish I could have chilled with Farideh!

    In Catalan-Valencian the burnt rice is called socarrat and is also something that one sort of looks out for in recipes. Sometimes you want it but you don't want to overcook it.

    As an Iranian I don't care for most Iranian dishes, I always cook for myself. But I know Iranian dishes can be a real new experience for other people.
    And one thing that I'm sure about is that Iranians know rice. Real deal good quality rice imported from Iran has a powerful flavor.

    I've saved this for later since it came out...my Persian father didn't teach me how to make tahdig, my Irish Italian mommy did. It's the only way I eat rice and there's nothing better than the crispy tahdig with a spoonful of ghorme sabzi or khoresht karafs.
