This typical Dominican recipe I present to you today at Joca's Kitchen is one of my favorites. And it is that when I want a perfect baked chicken with many flavors, this comes to mind. In addition, the Wasakaka Sauce that is prepared for it is unique. And it is that what predominates the most in this chicken and sauce is the garlic, oregano, and pepper.

Ingredients for the chicken.
1 large chicken clean and with his skin
1 teaspoon of salt
1 tsp pepper
1 sour orange
4 crushed garlic cloves
1/3 cup dried oregano leaves
1 1/2 tablespoons of complete seasoning powder.
1 tablespoon melted butter
For the wasakaka sauce.
1 lemon
salt and pepper to taste
1/4 cup white vinegar
4 crushed garlic cloves.
1 1/2 cups of the juice that the chicken releases in the oven
Preparation
We wash the chicken with the sour orange and remove excess fat, we remove all the insides. we only leave the skin
we make cuts with a knife inside the skin, so we do not deform the skin and it is more aesthetic
than we season as in the video with garlic, oregano, salt, pepper, and complete seasoning. We put that seasoning through the holes we made and inside the skin, like in the video
We reserve covered minimum of 5 hours. preferable from the night before
preheating the oven
In a saucepan, we put butter and the chicken. Above the chicken we also put butter. cover with aluminum and bake at 180g.c
It will be two hours of cooking. but within the first hour, we discover it and bathe with the juice that the chicken releases. and we return it to the oven with the aluminum for 40 more minutes.
We take it out and bathe with the juice.
We take out the rest of the juice to make the sauce and we leave it without the aluminum for 20 minutes until it browns nice
while with the juice we extract. In a pan, we put it to a boil with the vinegar. 4 crushed garlic cloves, lemon, and salt pepper to taste
Let boil for 2 to 3 minutes, thicken, and reserve.
Take your chicken out of the oven and serve bathing it in the wasakaka sauce. enjoy
