Hi Tucker, thanks for the video, Yunnan is super high on my list of places to visit. That looks like pickled mustard greens/stems, one of the most popular pickles in China and great in congee and sandwiched between hot fluffy white buns (mantou). If you're ever in Melbourne, we've got a pretty good Yunnan restaurant called Colourful Yunnan, although they don't sell exclusively Yunnan dishes, you can get a decent bowl of crossing bridge noodles.

Yunnan is famous for eating mushrooms, and there are a lot of mushroom poisoning people every year, that makes Yunnan also famous for the best mushroom poisoning hospitals in China, just like Chengdu is famous for the best anorectal hospitals(for eating too much spicy food)
Omg! That makes sense but is also really interesting. I can’t imagine destroying myself from too much chili 😱. There was a recent case in Australia where a lady invited her friends for dinner and all but one died from mushroom poisoning. She is currently defending her murder charge 🫣

I think authentic tibetan food suffers from the lack of local ingredients due to geographical location and isolation. you get that with some northern chinese and mongolian food as well. no hate but it is what it is, especially when in comparison with other cuisines with a wider ingredient base to work with.
Also probably due to the altitude as boiling point at high altitudes is actually lower temperature. Therefore it's hard for them to cook food like braising meat etc Because it's just not hot enough to cook unless they use a pressure cooker
