The master of the house could show that he had enough kitchen staff to create tedious works of art (think how much work went to creating this dessert for a crowd prior to electric beaters). Anything that demanded refrigeration until the moment of serving was also a sign of wealth. As we all gained electricity and refrigeration, many desserts such as mousses and ices fell out of fashion because everyone, even common people, could now make them. The very wealthy also saw their household staff numbers drop as few people in the Western world were interested in being "in service" post- World War 2, given the change in economies and the various other opportunities for advancement for the working class. Seeing such desserts make a comeback that has nothing to do with proving income or class and everything to do with making a meal that our families will love makes me happy. I hope to see Ruby Aunty make other popular Regency and Victorian desserts. I'm not sure if it's a dessert but I would love to see a recipe for Apple Charlotte.
