No, not 8-bit. This was 1-bit. The zx spectrum "sound chip" (that was technically just a beeper) was only 1-bit, and only capable of producing one note at once. The reason you can hear multiple notes at once is because you could make it sound polyphonic by switching out one tone with another very quickly so that it seems that there is more than one note being played at once.

A lot of famitracker stuff I have seen uses the expansion chips, Tim only had the internal sound chip of the nes and he could make it sing

You can easily modify a spectrum with an AY chip and make it stereo. It is bascily the same idea as the CPC did (from the factory) with the same chip.
