    Surely a boat company would do you a great deal/sponsorship. Ideal person to promote an Australian made craft and on an international stage the outboard motor. Although I'm sure it would come with some catches...

    In malay..
    Fish = ikan
    Coral trout/grouper = kerapu
    Chilli with shrimp paste= sambal
    Grilled = bakar
    Since u doing it with banana leave on fire so it was called "ikan kerapu bakar"..😛 u should put some lemon juice on top of that sambal before u eat.. very delicious. 👍👍👍👍👍
    And among the most expensive common dishes in malaysia depending on the type of grouper..

    I often cook with sambal oelek, and holy cow you put a crap load on that fish! I heat a few tablespoons of oil, throw some chopped onions in it, add a tablespoon of sambal plus a teaspoon of brown sugar, then pour it over the cooked fish (usu deep fried). Divine!

    I'm Thai and we cook with banana leaf pretty often, if u gonna grill with banana leaf u will need at alot of layer and wrap around the whole thing
    The trick is you will need big leaf with no split on the leaf so you get big and long sheet and then u wrap around the meat, seal the whole thing nice and tight(we often clip it with bamboo toothpick) so u can flip it around when u grill, the outside will burnt but inside will be super juicy and full with aroma from banana leaf its almost like steaming instead of grill
    Hope u can try it next time

    Kia ora Andy
    Just thought I'd drop you a comment. I grew up on a farm on the northern west coast of NZ it's 2 in the morning I've got terminal cancer and I often can't sleep because of pain. But I love watching your videos and I've become a fan over the last few months. But with covid keeping everyone on edge as well I want to thank you for all the joy and fun you remind me of especially growing up fishing and diving with my dad and family.
    Cheers Andy. God bless you and I pray you continue doing what you love and may you prosper.

    Andy I cook with Sambal Oelek a lot, and that was a truck load you put on that fish! My recommendation is to get 4 tbsp of oil hot, throw in half a chopped brown onion, a tbsp of sambal oelek, a tspn of white vinegar and a tspn of brown sugar and cook for 2 minutes then drizzle it over your fish. Exquisite!

  • @anwaarmohd6498
    @anwaarmohd6498 5 лет назад +9

    you put too much charcoal. Its too hot for seafood.
    Wrap the fish with banana leaves and then wrap it entirely with foil.
    After cooking for 5 mins, poke small hole at the corner for the steam to escape.
    The fish will be less burnt and still moist.
    Bring 1 or 2 limes next time. Squeeze on top of the fish and sambal.

    Thank you Andy. Cool adventure. Liked that beach. That place is amazing. It reminds me of the Virgin Islands but only half meter of tide there. I lived on St. John for 18 years and it looks like the cays northwest of the island. Off of Caneel bay there are a few small islands the Durlow cays then Lovango and Congo, Mingo and Grass. I spearfished in the waters there and did lots of beach cook and camp on Mingo. The north side of the islands is the Atlantic Ocean and the south is Caribbean Sea. It’s easy to catch fish there. Lots of inshore tuna and mackerel. Yellow fin tuna and Mahi offshore.

    Hey Andy, how about a crispy skin butter popcorn and panko crumbed fish fillet cook up? Just a normal pack of microwave butter popcorn cooked and crushed. Mix that with some panko crumbs and only crumb the flesh side of the fillet. Cook it on high, skin side down and then turn the heat down before flipping it over. Have done this many times and it's always a winner with guests. It's also good for squid too but you crumb the whole piece of that.

      If you want some heat in your meal you can add chili flakes, garlic flakes or anything else you want, just remember that whatever you add should be dried.

      Thank you for the comment and cheers. Sorry for the late reply. I have been busy creating online fishing courses. In my last video I give a an update on it. Also note, I do see all new comments, this time I just got a bit behind.
