Plain flour 200g
Strong white flour 40g
Lard 60g
Butter 50g - or all lard
100ml boiling water
1 tsp salt in water
Why didn't I watch this before attempting hot water pastry... He makes it look so damn easy!!
Idk if I added too much liquid or what but the second I tried to pick mine up to line my tin it fell apart 😭... I now have a patchwork pie cooking in the oven 😂😂

I would love to make a chicken, bacon and leek pie and bacon and egg pie using hot water pastry, but cannot find a recipe for anything using this pastry bar pork and game pies. Is hot water pastry not suitable for the pies I want to make?
Fiona Hawke I use it alot when I make other pies :) it's works well just experiment with ideas :D sausage meat with onions and apple and bacon is a fave for my little family xxx
what can be used to sustitute lard? It's nearly impossible to find where I live.

How do you make this type of pastry crust softer? Every time after the baking it's as hard as a rock. I use it to make pork pies and I've experimented with different oven temps to no avail.

try using less water and more larde to make it softer

Can I substitute vegetable oil for the lard in this recipe? If not, why not?
+jane irvine You can't because they are different kinds of fat. Lard is solid at room temperature(like the butter), while vegetable oil is a liquid at room temperature. So the vegetable oil would simply not make the same consistency of pastry.
You wouldn't get a dough that would be stiff enough to roll out.
Would prefer to see the whole process. Now need to watch a better one that I can use/follow.

When I make mine it tears really easy when I try to put it in the pan. :(
are you suing enough strong flour? it should be quite elastic

Shame I can't find a video of Paul using his own design Paul Hollywood dolly. Maybe there's some special technique for it, but I've found that all those strange flutes and holes makes the pastry stick to the dolly much more than to a regular one or even a jam jar. C'mon, Paul. Show us how to use that dolly you designed!

Mr Paul wound not agree with this method. To each his own I guess.
I've just tried this and it was an unmitigated disaster!! I double checked all my quantities, which were spot-on, but the result was a soggy, greasy mess. Heaven knows why.
