I have been making Ruebens since the early 1970s. You did a great job showing how to make a great sandwich. You should have mention what cut of beef you used because that's a very important ingredient. I like melted swiss on both halves with the meat and sauerkraut inbetween.
Eating one of these now. I use your double grilled bread / sandwich assembly method and your dressing recipe. I don't think it gets any better than this. Thank you.

Nice, my family used to make Reubens all the time when I was a kid. Personally I always brush the corn beef with English mustand (Dijon isn't spicy enough) after the beef is done cooking.
My favorite and beats making it yourself at home. At a poolside cafe in my neighborhood the sometimes so-so reuben sandwich with fries or a salad + a soft drink is about $12US + tip.
I always had a ruben and draft beer with momma when we would go to the horse races. I like your method of cooking the beef yourself, this would be perfect for me because I could hold back on that garlic and omit the cloves. That sauce looks great, too.
Stock is broth which has been flavored with meat or without, which is called vegetable stock. If you haven't the time to make it, you can find it in any supermarket.
Joseph's brother got a sandwich named after Him because he interceded for his little bro who used to bring lunch out to the fields. Joseph got inspiration while he was in the Egyptian prison in his time with the butcher and the baker, dream interpretations weren't the only thing on their minds apparently, inspiration to get outta jail and back into the kitchen! I think Joseph liked chicken sandwiches, since Turkey was not available in Egypt in those days. It was made like a shawerma (or gyro) and was grilled & pressed like a Cuban or Mexican Torta.
