I think, the reason Haikyuu!! made volleyball looks and feels cool is because it's treated a lot like a magic system of a battle shounen. It also feels like a battle shounen where the protagonist tries to get stronger in using the existing magic system. And because there isn't really world-ending threat, each match/battle felt more personal because there's no superficial motivation like surviving or stopping threat to the world. It also helps the viewer to understand the tactics Karasuno is going to use in a match if it's something new, example : Synchronized attack, though they're not shown to have mastered it, but the viewer can see they're trying and hence it isn't a really big surprised when they pulled it off.
