Yes, you’re right. He discussed the GI and what you’re saying is know as the glycemic load or GL. The GL is taking the GI and the amount of carbs from the serve. So, the smaller serve of carrots would have a lower GL than a larger serve. However, in this case the amount or carbs in 6 oz (180g) compared to 3 oz (90g) of carrots would still have a low GL. Also, beta-carotene (Vit A) is better absorbed from cooked compared to raw carrots. Same with lycopenes in tomatoes, lycopenes are better absorbed from cooked tomatoes.
He has said T2D runs in his family and that he has developed insulin resistance but isn't diabetic (yet) and is trying to prevent diabetes by understanding which foods raise his blood glucose so he can avoid or limit them.
