Was looking for some non-mayo coleslaw recipes and came upon yours...thank you. I wanted to share some of my variations-instead of adding a sweetner, I added raisons. I also used balsamic vinegar. Instead of olive oil I used tahini. And added cumin. It was really yummy

My wife has gone vegan, so I have been looking for recipes that she will tolerate. I believe this one will do the trick. I have ALWAYS used mayonnaise in my coleslaw recipe. My wife always loved it, but now she won't eat it. I will be making this recipe soon (minus the honey) and, honestly, I am probably looking forward to trying it more than she is!
Can you make this with pre done bags of coleslaw rather than chopping up all the veggies ? And if so roughly how many bags would it take to compare to yiur recipe ?
Yes, that would totally work, Jim. My recipe makes about 8-10 cups or so, depending on the size of the cabbage. I believe that would be about 24 ounces of shredded cabbage, or thereabouts. I don't have exact measurements on that.

Hey, sorry to hear. Is it only bell peppers, or all peppers? You can use other milder peppers (Anaheims, sweets, Italian sweets) for the flavor and crunch factor, but if she can't have any peppers at all, I would add red onion (soaked to remove some of the bite) for the crunch factor, or celery, maybe extra carrot. Apple would be interesting as well here. Let me know what you wind up choosing, and how it turns out. Enjoy.

This is great with pulled pork. Pork works really well with vinegar, so having a vinegar based slaw is a perfect pairing.

I used Trader Joe’s South African Smoked Pepper Flakes and it balanced the slaw very well.
