      The very 1st recipe I made from Jim was chicken parmesan. It was the very first time the breading stayed on & it cooked perfectly.
      I'm absolutely in love with his stuffed peppers & linguine & clam sauce, & his mushroom barley soup just filled my heart with memories; it's exactly the way my Momma made it. She passed away without leaving anyone the recipe so I hadn't eaten it in 24 years. I cried & smiled while scoffing down the whole pot of soup.

      be cuz there carot involved .... you can put a 3rd cup of carrot juice in a tomato soup cambells and you wont tast it .... also carrot + brocoli + teriyaki iz amazing dont add onion to that

    "for people who moved out of new york and desires these things"...AMEN!!! This is one of the primary reasons I love this channel - it's all "home". Thank you so much for this one, especially, as I've always been a cole slaw fan but never knew how to replicate a classic deli style. Sure other slaws are good but this variety has been missing from my life for too long.

    As an 80s kid, cole slaw was just EVERYWHERE! I could always take it or leave it but I’m taking notes on this video cuz my wife simply loves the stuff. I’ll cook anything for her. I love the variety of dishes/side dishes taught on this channel! I love that it’s not all entrées.

    I have spent several years trying the coleslaw all around my area--grocery delis, chicken joints, etc. Everything creamy.....with cabbage that fights back.
    Nothing like the coleslaw I knew in my youth.
    When I saw this and the brine step I knew the quest was over. And I could make it myself.
    About to consume the last of my first batch.....many thanks. Solid winner in my book.

      Midwestern Deli cucumber salad is sliced cucumbers, sliced red onion, diced tomatoes, and bottled Hidden Valley Ranch Dressing, the original. The amount will depend on how many cucumbers you use. One big bottle does a lot.:)

    love your channel and everything about it...........
    1) I know this is the authentic recipe but I would use half the sugar
    2) I leave the core in the cabbage and quarter it , then slice or mandoline as usual until you get to the rough, thick base near the core - switch it up until you get to the core and discard. This saves a step and the cabbage doesn't fall apart when you get to the end (I do this with onions as well) I learned this from years of prep work
    3) I'm a southern boy and Dukes is definitely my favorite but every cook has to be considerate of regional authenticity - Hellman's is the standard mayo north of Baltimore - then proceed accordingly - every recipe needs a baseline to operate from - I was taught to learn the original and riff as you like - your instructions are precise and simple to follow

    Thank you for all the NY deli side recipes.
    I can't get any decent sides here on the west coast, & no one makes the cucumber dill salad. I'm in foodie heaven. Yippee!
    Now that we are in the throws of summer, if you guys can show some more of your wonderful cold salads it would be much appreciated. Between the smoke from the fires & the high 90s to low 100s temperatures my appetite is waning. A cold salad would be perfect.

    I'm from North Jersey and moved to Bologna. While I am not complaining about the food here I do miss certain NYC staples and this is definitely one of them. Now I need to find "cavalo" and give this a try.

    Saving the juice is a great tip…. So many things you can do with it…. and please (PLEASE!!!) do the cucumber salad recipe!!
    And thanks for being sure to tell all those watching, to use the “guard/handle” when using a mandolin…. Other RUclips cooks make me cringe when they use a mandolin bare handed…. Accident waiting to happen….

    I grew up on LI, on into my 20’s but moved from there to western Ohio a long time ago, and have sorely missed NY deli food, pizza, bakeries and Carvel. Can’t wait to try this recipe!

    I like some diced green pepper in my coleslaw. It gives color contrast for look appeal and adds flavor. Most coleslaw that I have tried have way too much mayo regardless of the brand. I do not like coleslaw mayo soup. My mom was Polish and she made a fantastic coleslaw. Thank you for posting all your recipes and yes, I would like to see your cucumber salad made with recipe.

    This was the best coleslaw recipe I have made, I used precut coleslaw mix and it was fine, brined it overnight, this will be my go to recipe.

      And draining it some people do not drain it after they let it set and when you get that in a deli it's quite disappointing he said to save the Brian but did I miss the part where he said what to use it with

    We’ve made this Cole slaw twice now and it’s the best! It keeps several days and stays crisp and creamy much longer than any other recipe we’ve ever used.

    I made your potato and macaroni salads for the 4th of July and they were a huge hit. A gave some Northeasterners their Ratatouille moment. I'll definitely give this one a whirl as well. Oh and I absolutely concur about the mayo, every deli I ever frequented on Long Island used Hellmann's. Every once and awhile you'd have a friend who belonged to a Miracle Whip home and was subsequently shamed and disparaged accordingly.
    (edit) You should also add Chinese Takeout to great food institutions of the New York area. Trying to get half-decent Chinese food in the South is as difficult as good pizza or bagels.

      I know what you mean about Chinese food.
      I lived in South Florida & the Chinese food there was as good as in NYC but here in the Pacific Northwest- egad.
      I've taken to making my own Chinese food. I've yet to be bold enough to make egg rolls or wontons but I can make some mean entrees. Check RUclips & you'll find some great Asian recipes.

    even though the brine isn't my personal preference, i can appreciate the intention to show people how to get the authentic deli taste. i'm sure there's a lot of people who will get major nostalgia when it tastes just so. for my husband it's taylor ham, egg and cheese on a bagel. sadly you can't get anything that tastes even similar to taylor ham in europe. but i did learn how to make bagels that give him the back at home feels, we've never found any store bought or from a bakery in europe that will pass the taste test.

    This was delicious! I made it as soon as I watched your video. My mom made a coleslaw that was so basic, but no sugar. I was never able to get it right. This is so much like hers. The secret is the overnight brine. Thank you for sharing! I almost ate all of it by myself. Yummy.

    NY deli salads are the BEST! I miss them! Grew up in Long Island and they are the best!! But I always remember having carrots in coleslaw from Long Island. It makes it.

    My mother always gave me the goyumbeck of the cabbage. The inner part of the stem. So sweet and crunchy.
    Don’t really know that that word existed but I’m Polish and as I was the youngest sitting there watching my mother make coleslaw I got it.

    Love this series! I'm a Jersey Boy living in a Maryland world. Miss the Italian delis on every corner. We have a few in MD but they are a place you need to search out.

    Nice! Some good tips here. I'm an Aussie so I've never been to a new york deli but I'd love to sometime. All that comfort food! Also lots of donut places.

    Looking forward to making with a mandolin instead of the box grater/shredder. It looks so much lighter. Agree to add carrots for the texture, plus the color is pretty. I like celery seed on top. The cuke salad looks so cool and refreshing!

    Thanks Jim & Tara! Will have to try this. Never did a brine before, interesting and since I just got a mandolin I'm all set. Would really like to see the cucumber salad since I am a big fan and always have to have one when I make salmon. How I miss NY Jewish Deli food!

    wow you are amazing! so impressive i live in the south now but i was born in queens and raised on long island in the era of delicatessens which we do not have in the south, this truly takes me back to my childhood.

    Best cole slaw I have ever made! It's all in your technique. Who knew it would make such a difference to brine the shredded cabbage. I did the two-day brining and just mixed it up with the Best Foods/Hellman's mayo this morning so we will have it for our July 4th feast. I live in CA now and this tastes like the real NY deli cole slaw of my dreams!

    I worked in a deli in fairfield county CT in the late 90s, this was very similar to our recipe, which our owner bought from the previous owner.
    My shift was friday mornings, I would cut the cabbages on the slicer

    I never thought of marinating the slaw overnight and THEN adding the mayo. But I'm definitely going to try that.
    I'm a northern NJ gal, living in the south. Duke's is practically a religion down here. I've decided to be Switzerland; I use the Chosen Foods avocado oil maynnaise.

    One recipes I’ve had trouble with is tuna salad. If you have any recipe recommendation or input here I’d love to hear it.
