- The History and Secrets of Rocky Road ice cream, the flavour has so many variations across the world, I could be here forever trying to ID all of them. In this video, we talk about the history of the flavour, where is comes from and then how to make rocky road ice cream itself.
It's actually a really easy one to make but as we recreated Whit's Frozen Custard' version, there are a few other ingredients.
To make the ice cream base you'll need:
320ml Milk (1.8% fat)
240ml Double Cream (Heavy cream) (50% fat)
100g Sugar
55g Corn Syrup/Golden Syrup
35g Skimmed Milk Powder
2 Egg Yolks
15g Cocoa Powder (24% fat)
5g total Stabilizer NOTE:
I used Locust Bean Gum 1.5g and Mono and Diglycerides of fatty acids 3.5g (Silk Gel).
Feel free to omit the stabilizers if they're not for you.
I used chocolate covered almonds and mini marshmallows and it was a perfect combination. Whit's (when I had it) had normal almonds and larger pieces of marshmallows.

When adding chocolate is the type important? Like whooe mill chocolate, 50%,75% ?
It’s totally up to you, you can make this to suit your taste. Most people go for milk chocolate but you’re free to experiment.

Is there any alternative to Skimmed Milk Powder?
Professional grade ice cream does rely heavily on skimmed milk powder. You can though use a different recipe that uses condensed milk. I recommend watching this video which shows how to make a Ben & Jerry’s ice cream that’s DOESN’T use skimmed milk powder ruclips.net/video/VJBAtzcF8f4/видео.html
@@PolarIceCreamery So, I just found your channel yesterday and did the recipe without the milk powder. Worked amazingly :) However, I used 5g LBG (as single stabilizer) for the Häagen Dazs Chocolate Peanut Butter Ice Cream recipe and the ice cream got soo gummy :D Lets see, I assume that this was way too much haha. But now I know where to keep an eye on when using LBG as stabilizer. :) Thanks a lot
Ha yes 5g of LBG would make wallpaper paste 😂 it also isn’t the best on it’s own, much better if used with Guar Gum at a 2-1 ration to a max of 1% in ice cream. Can be higher in gelato though due to lower fat.

I like it but I wish you broke down the ingredients more as you were adding them to the base. Like how much of whatever it was you added. I really need a step by step instructions. I have been trying to make ice cream at home and was wondering why they always got hard and icey in the freezer. So I was looking on RUclips for a solution when I found your videos. I now know that I needed to add stabilizers to the mix. I ordered ice cream stabilizers on Amazon. But I don't know how much to add to ice cream.
