Happy Taco Tuesday amigos, today we will be preparing soft shredded beef potato tacos. You have a choice between hard shell or soft tacos, and let me tell you, friends, they are both great choices. We are also going to be showing you how to cook shredded beef in your instant pot. The recipe will make 45-50 tacos
Corn or flour tortillas
Potato mixture
2 large russet Potatoes
1 tsp black pepper
1 tsp ground cumin
1 tsp salt or to taste
Shredded ground beef
*boil chopped potatoes for 10 minutes on medium heat
soft shredded beef potato tacos dorados with/ roasted salsa recipe
-Instant pot cook time: 33 minutes
2 pounds chuck roast beef (diesmillo)
1-liter water (4 cups water)
1 white or yellow onion
1 whole garlic bulb
1 tbs chicken bouillon or 1 tbs salt (or to taste)
* Add enough water to cover the beef
Roasted salsa
3 Roma tomatoes
1 Jalapeño
1 tsp salt
1 tsp Mexican oregano
Juice of a half lemon
Optional-a small bunch of cilantro
* We kept it out today for our cilantro haters (We love you ❤️)
Toppings: Medium freshly shredded cheese, iceberg lettuce, cotija cheese

I live in (far) Northern California and have worked at the same convenience store for 20 years. We love our harvesting friends, some we see year after year. Tacos of any kind are my favorite food ever !! I prefer corn tortillas for tacos, tostadas, enchiladas. And flour tortillas for chorizo & eggs, chili verde, chili Colorado, quesadillas, soups, fried bologna wrapped in a flour tortilla😋 I just love tortillas!!! I love the instant pot the meat comes out so tender chicken everything even if you forget to take meats out of the freezer you can still cook it frozen you will have within minutes a nice hot meal do use it all year around

We had deconstructed green chile enchilada meal soup. It had everything for the enchiladas and I added refried beans. It hit the spot. And there was enough enchiladas soup to make the enchiladas today.

I use my Instant Pot, for chucks & Pork shoulders, cubed the same way. I brown them, on a sheet pan, at 450F before adding to the pot. You could reverse sear your meat in an oven, for the added texture. I've watched a few of your videos & you use the word "Roast" for pan searing. I always associated roasting with an oven. Other way it looks good. Safety feature of the Pot: It can't open under pressure. 😊
