As a pasta freak and a gourmand watching this made my heart hurt. Some tips- 1. Wait until the water boils to add the pasta (and the salt doesn’t make the pasta cook faster, it just adds flavor to the noodles) 2. Don’t overcrowd the pan with shrimp when you’re sautéing, otherwise the shrimp won’t cook correctly and you’ll create a steam effect. If you have a lot of shrimp, cook in batches. And it’s a good idea to cook them in butter and olive oil. 3. Don’t use bottled Alfredo sauce. The taste is far inferior to the real thing, which is very simple to make. Alfredo sauce only needs butter, parmigiano reggiano (get the real stuff, not the Kraft jar which is full of filler ingredients), and heavy cream. 4. Don’t drain the pasta. Transfer the noodles (using tongs) from the pot to the sauce. The starch from the pasta water will cling to the noodles and make the sauce coat the noodles amazingly. This tip right here will really transform the flavor and quality of a pasta dish, believe me. And personally, I like to add white wine, cayenne, sautéed chopped red pepper/mushrooms/green onion, cracked black pepper, and a can of fire roasted tomatoes to shrimp Alfredo. Highly recommend it, it’s always a crowd pleaser.
