Dr banner radiation protection was secretly a super soldier program which he did not know that's why he experimented on himself. The super soldier program is also called weapons Plus which is the precursor to The weapon x program where the character wolverine was created.
Well even in the classic comics Cap generally didn't use guns, however the MCU was meant to have a more grounded feel so it drew from the somewhat more grounded Ultimates line of comics where Cap did use guns more

If you didn't notice Peggy Carter was also heading towards the grenade but Steve beat her to it. Truthfully Peggy would have made good super soldier as well if not better than Steve with her own morals and her advanced combat skills. If you want evidence of my statement you should check out the marvel one shot short film agent Carter which is Canon to the MCU. Then after that check out the agent Carter TV series it has two seasons. Despite the series not being a Canon to the MCU is still a pretty good series series.
Wow, I started watching until I saw the measly 27 minute reaction time. That’s ridiculously short for 2hr long movie. People have longer reactions to half hour tv shows! 🙄

Cap, was a soldier so yes he used guns. As a super soldier he could do more without weapons, but still needed them for "war".
