Do you feel like the drying time is longer for a larger freeze dryer? I was curious why so long for pineapple since I have been doing double stacked pineapple in a medium in only 30 hours, pre-frozen. Also, I know time is money, but it hurt to see some of the pineapple left on the skin. I cut mine in half and remove even more from the skin. Big pineapples have a lot left behind when using that corer. I am a little skeptical about the racks as the water needs to be boiled off the fruit and contact with the metal of the tray will result in better heat transfer. I guess the heat can transfer up into the rack?
I freeze dry pineapple in tidbit size, and it took about 48 hrs. I freeze dried chopped celery and seedless red grapes in that batch and the grapes did not finish well. I poked a pinhole in the grapes before FDing, but they were shriveled up and still alotta juice; they got pitched. I was thinking that maybe the grapes need the "candy mode". What do you think? Have you FD grapes?

FD grapes are delicious. We halved them and put them in the FD.
I haven’t done grapes yet but planning on it!
What about just freezing it in the freezer before putting it into the freeze dryer
That's what I do for all fruit but for this video I let the machine do the freezing.
