  • For this cook I fire up my Gateway Drum Smoker and hang a Tri-Tip. This smoked tri-tip was super easy to do on a drum and the flavor you get with hanging meat over coals is absolute fantastic! I used Blues Hog Lump charcoal and 1 chunk of hickory for the fuel and it gave the tri-tip a nice smokey flavor. I seasoned down the tri-tip with Sucklebusters Campfire Steak seasoning and the flavor of that rub on beef is my absolute favorite! Hope you all enjoyed this video ane have a great week!

I completely agree with you, Brian. Vertical style smokers; drums, bullets, etc. make a lot of sense. Way too much; money, time, and effort is spent and (dare I say) waisted trying to make smoke go sideways. Smoke naturally rises! Off sets, reverse flow, etc. are all trying to manipulate nature. Vertical smokers use the natural law of smoke rising to their advantage.
The tri-tip looked fantastic simply perfect, BTW. Great video!

I love me a great mullet! Had one as a kid, lol! Pulled a Tri-tip outta the freezer for tomorrows cook and looked that price in November, OMG $17 for a 2.5 pounder, now that is like $30. Insane meat prices. Cheers brother, love that Gateway, and vertical smoking myself

Good luck at your first kcbs! Me and a buddy did our first a few weeks ago and had a great time. Learned a lot through talking to others. We did it with one drum and a gmg so our timeline was…interesting. You will be set up well with a smoker per category! Have fun!

So, somewhere between your 2nd temp check and when you removed the meat, you had foiled it. After 40 minutes and then how long? I think you missed showing us a step or two. Nice cutting board, btw.

Hmmm ya I foiled it to rest it. Imma have to rewatch the video to answer that question. And thanks Mic

Brian, absolutely loved this video brother! Just LMAO at the grunting noise. The cook was great by the way! Can’t find a tri tip in Buffalo, but did score some Charmens reserve baby back ribs. Really beautiful cutting board. The Chief showed off his in a previous video. Nice cook! Cheers!
