    MAEDA goes to OHARA to buy vegetables first thing in the morning three days a week. Besides OHARA, he picks wild grasses and runs around Kyoto to collect ingredients.
    After 10 years of training at the hotel's Chinese restaurant from the age of 18, MAEDA switched to French cuisine at the age of 28. He trained at the restaurant "HAJIME" in OSAKA. He became independent in 2012.
    The modern French restaurant has been awarded a Michelin star just one year after opening.
    MAEDA was born and raised in KYOTO. He expresses his sensibility and aesthetic sense in French cuisine. Even now, MAEDA researches the history and seasonal events of Kyoto. He combines classic dishes with new ideas. This video introduces MAEDA's new challenge.
