Hi Pailin! In Chiang Mai, and then Koh Lipe a couple weeks ago I fell completely in love with Moo Nam Tok, so much so I (jokingly) asked the chef for the recipe. She said she would be happy to teach me it! I was doubtful, but she insisted "now?" Next thing I know we are in her kitchen at the restaurent and Im hands on making it myself. Fantastic experience, fantastic dish - cheers for this recipe :) x
What a cool story! Thai people are always happy to share our recipes with people from other countries (hence my channel!) so I'm sure she was thrilled to teach you and to see you so excited about her food!

Oh yeah, I love this dish. First time I try khao man gai with the chicken mix namtok. That's soooo delicious. I try made it at home too with chicken, love it! 🥰
Have to say, I only recently just started using fresh mint in my thai salads and it really is fuckin delicious (as Gordon would say). In fact, all those fresh thai ingredients coriander, lemongrass, chilli, mint really do lift your food, taking it to another level.
I made this one last night. I used some steak left over from the previous nights bbq, but sliced very thinly with extra seasoning. "It's like being back in Thailand...in a top restaurant!" I've now made six dishes based on Pai's videos, and every one has been sensational.
I reduced the fish sauce and lime juice by 2/3. Also, left the chili flakes and toasted rice on the side. Might need to pound the lemongrass in a mortar depending on how fibrous it is. Last, tip is to not dress the mint and cilantro leaves until right before serving.
When I make this, I don't leave the juice of the meat on the board, it goes in with everything else. The best part of this dish, you can use any type of meat. My favourite is duck breast. 🤤
I wonder, there isn't much of a difference really 'tween Nam Tok Neua and Yam Neua Yang, is there? A bit of tomato and celery in the latter and a slightly more intricate dressing, but basically they are pretty much the same, no?
+Stef Hendrik The toasted rice powder, mint, shallots and dried chili flakes make a big difference in the flavour actually. Also lack of sugar in nam tok.
Not to be a smartass but coriander isnt very traditional :) I believe traditional recipe puts culantro instead, I realize however that it might be really hard to find abroad, so I'll spare you that one :D Keep up the good work, I watch your videos while eating the very dishes that you cook and it makes them taste even more amazing. I eat this with pork (it's cheaper than beef here lol) and much prefer it to the similar dish of Laab!
