Mr Kapoor, Thanks for sharing this spinach kofta recipe cooked in gravy. I had to improvise a little mixing coriander leaf and spinach (palak) to get suitable quantities and as I'm not fond of the acidity of tomato, made the gravy with sweet peppers (orange and red) and the small guava fruit I had separately sauced with a little honey (as the trees in New Zealand are currently doing their thing). Instead of methi I tried dried mint and curry leaf powders. These gave the gravy a sharp, sweet, fresh aspect and deep red tone. The meal I had this with included dishes of pumpkin curry (mustard seeds and coconut pulp based) and a bright simple moru curry (recipies from Das Sreedharan's little book 'Easy everyday indian' published by Quadrille) with basmati rice. I find the format with the popup ingredients helpful as I'm just learning hindi and don't know all of the ingredients alternate names. Your relaxed and skilled kitchen demonstrations, environment, and plating presentation are a true delight. Cheers Jennifer.

mr. kapoor my mother use to make this recipe in 1970s she use to blanch palak ,drain the exess moisture,grind it mix grated mawa or milk pow and dry it by cooking it in kadahi and adding bread crumbs if needed .adding some ilaichi pow .kasoori methi salt to enhence the taste. making koftas by stuffing them with dry nuts and paneer mix .this recipe is a hit item in my house.
