I love the look of your handwriting and sketches. A suggestion I have is to try making the ship accelerate and decelerate more gradually when you press the button/release it instead of setting the velocity instantly - curious to see how that would change the feel.
I like your progress video's. I've been busy myself with a game project in Pulp. I got some flashbacks of an old DOS game Galactix, where the spaceship shoots a grappling hook to get items. When fired, the hook keeps on moving up automatically, but it also moves along with the ships left/right movement, so you do have to make an effort to get stuff while moving and fighting. So I thought it could be a fun mechanic in your game if you eject a grappling hook with the crank, by making it longer and pulling it in again. I do understand that the crank already has a gameplay function. The other option, like in Galactix where the grappling hook moves automatically after pressing a fire button, could also work great because of the continuous movement of the ship in your game.
