How to make perfect CREAM PUFFS _ Bánh SU KEM (Choux à la Crème)

- This is one of my most favorite desserts. What is better when you bite the soft, light puff and the cold, buttery creamy filling just oozes out and melt in your mouth? This is how I make my profiterole puff and the tradition cream filling.

Pastry Quantities of Ingredients: to make 40 Puffs of about 8grams to 10grams for each puff.

*120ml (=1/2cup) water (nước)
*120ml (=1/2 cup) milk (sữa tươi)
*1/4 teaspoon Salt (muối)
*100grams (= 3.5 ounces) Unsalted Butter (Bơ lạt)
*125grams (=1cup) plain, Flour, sifted (Bột mì đa dụng, rây mịn)
*4 eggs (= whole egg) (Trứng, nguyên quả)
Preheated oven 220C (=425F) for15minutes . Bake 20 to 25 minutes. Leave an extra 5minutes in the oven after the oven has been switched off, before taking the Puffs Pastry out of the oven.
Làm nóng lò 220 độ C (425 độ F) trong 15 phút. Nướng 20-25 phút. Sau khi tắt lò, để yên thêm 5 phút trước khi lấy ra khỏi lò
Cream Filling: Quantities of Ingredients: (can double if you want more filling!!)

**18grams (=2 Tablespoons) Cornstarch flour (bột bắp)
**40grams (=3 Tablespoons) Sugar (đường)
** 3 egg Yolks, lightly beaten. (lòng đỏ, đánh nhẹ)
**240 ml of Milk, "warm" NOT "boiling Hot" (sữa nóng ấm, không để sôi)
** a pinch of Salt (1 nhúm muối)
** 5ml (=1/4 teaspoon) Vanilla Extract (chiết xuất vani)
**25 grams (=2 Tablespoons) Unsalted Butter (bơ lạt)
Excellent recipe. Thanks for including MEASUREMENTS in BOTH American🇺🇸 IMPERIAL MEASURES & METRIC MEASURES. Helps Americans to learn both. Also, I like using both Milk & Water to melt the Butter. It works both ways but I’ve made these since the age of 7 & my Mom ALWAYS used half-Milk & half H2O. They taste a lot creamier & have a fuller texture with 🥛 Milk. Thank you very much! 👍🏼
Yes! I coudn't agree more about half water and half milk. I have had experiments with water only and milk only and the puff didn't turn out great!! Thanks for watching and sharing!!!!

I love making cream puffs. The last time I made them I made a lemon curd and folded in whipped cream. The first time I made cream puff I used a pineapple pudding from the store and they were awesome. You can flavor your cream puffs in so many different flavors

Hello 👋 hope you will be able to notice me.. I’m Des from philippines 😀 can i ask if you only maintained 425f all throughout baking cream puff? You didn’t decrease the temperature? But Out of all the temperature that i saw and tried here on cream puff only yours is unique ( you didn’t decrease the temperature) and I’m amazed because it works my cream puff aren’t deflated and its not doughy inside instead it’s hollow so there’s space for the filling..
But honestly I’m confused what right steps did I did to make the cream puff puff, because on my earlier trial I used mixer to mix the eggs on the dough one by one but now I mixed it manually and then I followed your temperature.. can you help me? Thanks 😘😘😘
Thank you for your comment! Basically, what makes it puff is the vapor from the liquid you use, thicker batter wont provide enough vapor for your puffs to puff, meanwhile, too runny batter will make it puff too fast when the crust is not solid enough, therefore it will deflate.
If I'm not making those puffs commercially then I would prefer to mix it by hand too since it will give me the right feel of the batter.
