A few things to note here:
1. He may look scrawny but Hiccup is expectionally tall, meaning his long arms have more power behind the punch similar to a giraffe swinging its neck to headbutt a lion
2. Strength can also be partially genetic so he may have traits or his father's immense strength in him
3. Hiccup rides a night fury which is faster than any vehicle ever made meaning he'd have to be pretty strong holding on at that speed (though his metal leg probably helps with that)
4. There's a reason Hiccup's ancestors lived long enough to be cheif and have kids, meaning they can hold their own against enemies and all manner of dragons
5. Snotlout gets beaten up by Monstrous Nightmare daily so his body is probably in bad condition already
I wouldn’t go so far as to call Toothless faster than any vehicle ever made, as the wiki compares his speed to a P-51 Mustang. Still, for a living thing, that is very impressive and it really doesn’t take away from Hiccup’s strength

Hey, I just realised something, when flying a dragon they have to hold on to the saddle, sure their leggs have straps around it, but the wind Resistance still affects the rest of the torso, and given how fast toothless flies would imply that Hiccup really has strong arms... Just something I put together and decided to share
