  • Homemade grape wine without yeast. Very tasty
    Ingredients
    Black Grapes - 1 kg
    Sugar - 1 kg
    Wheat grains - 50 gm
    Cloves - 4
    Water - 2 litre
    Please Note - After filtering the solution for the next 21 days keep the lid of the bottle in which you are storing the wine loose , so that the gas can escape , otherwise if the lid is tight and when you open the bottle the wine might spill . Once all the gas has escaped that is after the next 21 days you can close the lid tight and store. Do not shake the bottle otherwise the residue settled in the bottom will get mixed .

    My Uncle used to make homemade wine without yeast. But he told us his secret. Two pounds of sugar to one pound of grapes. And he made it in wooden barrels on his back porch. 6 of them at a time.

    I have a question though, does your recipe apply to other types of grapes? Or there must be alterations?
    If I want to reenact the exact same steps shown in the video, will it work?
    And another thing, if I'm going to let said wine age, I preserve only the liquid shown in the final step in a cool dark place, right?

      Dr Joey Thank you so much for the appreciation. This recipe is very much perfect for black grapes. For green grapes there are alterations in the steps .Try this recipe for black grapes. After filtering, bottle the clear solution. Fermentation process will continue for the next 21 days also, so during this period keep the cork of the bottle loose, so that the gas escapes and you can avoid spilling of the wine when you open the bottle . After this 21 days you can store the bottle in a cool dark place with the cork tight .

      But about the green grapes, can you please explain said alterations? Or maybe make a video or recommend an educational source where I can figure this out?
      And can green grapes successfully ferment without adding yeast?
      Sorry if I'm troubling you with my questions, I just found your explanation more relatable and easy to understand than any other.

      Dr Joey For Green Grapes the process is almost the same only at the filtration point make sure that you do not squeeze the residue, so that that the solution that you get is a clear solution. Wines made a of green grapes are not white but pale yellow in color and also as it ages the color get little bit more dark. The storage process is also the same, though I haven’t stored wines made from green grapes for a long time. But anyway you can try. 😊

    Really very simple wine making process. But you didn't used any type of yeast fermentation and antibacterial agents in wine making. And also after making wine 🍷 is there always need to freeze wine bottle or we can store bottle in normal temperature.

    3 kg red grapes
    3 kg sugar
    6 ltrs boiled cool water
    250 grms wheat grain grind
    10 cloves
    10 cardamom
    My question is I saw you used 50grms for 1kg grapes so mine is 100 grms extra wheat, I hope it will not spoil my wine. Also how to make it more alcoholic. 😊

      Mercy Mudo My recipes is a tested recipe and perfect for grape wine. Hopefully you should not have any problem, but do stir the mix daily. Good luck to you and do share the results.

      No problem if you used 250gm wheat. The wine will have little whiskey like flavour, nothing else. Wheat has little bit of yeast and nutrients which help in fermentation.

    I would suggest using 1.25 kg honey instead of 1KG table sugar. It's spiced grape mead called Pyment, much tastier and healthier than normal red wine. Keep it for atleast a year for ageing. It will beat the best wines commercially available in the market. Use dried rose petals for nice aroma.
    Prepare large quantity and store it in several bottles and enjoy bit by bit throughout the year. It will keep getting better with time.

      There's a limit to wine getting better.
      1 year is a long time. For the seller, it's an easy way of making more profit for doing nothing but storing.
      3 months is more than enough time!

      @@m_i_g_5108 I have consulted the experts and even tried myself. Many recommend to keep atleast for 6 months and by 9 months it matures well. Just like pickles, wines taste better with age.

      @@dr.ashak.9375 when bubbling stops completely, wine clears to maximum limit, which takes upto 3 months, seal the bottle airtight and keep under the kitchen table or any cool dry place like underground store room. Ideally this should be kept in 13-16 degree C temperature.
      More mature wine becomes, more taste and nice aroma it gives out.

      After fermentation it is alcoholic .. somewhere around 10 % … It increases a little bit more as it ages.

      Grape skins contain a lot of active wild yeast naturally, this causes fermentation, the sugar from the grapes as well as the added sugar is fermented by the wild yeast in the grapes and then you're done. Most fruits actually contain active yeast, most commonly the skins.

    Under what conditions did you age the 1 year old wine? Room temperature, in the fridge? Fully bottled with cork? Thanks for a great video.

      After filtering for next 21 days keep the cork/cap of bottle in loose mode, this will help the gas forming during that period to escape. After this you can close cork/cap tightly and store in room temperature ( 15 to 30 centigrade ).

      She washed the grapes off so the natural yeasts on them wouldn't be enough. I'm guessing the grain helps attract wild yeasts in the air and jump starts fermentation as the starches break down quickly

      V K Stir only for 21 days . After you have filtered the solution and transferred to a bottle no need to stir . Once filtered again 21 days will be needed for the residue to settle . You can have it after filtering, but as it ages the wine becomes crystal clear and the taste and quality of the wine improves. Also after filtering do not shake the bottle,, otherwise the residue settled in the bottle will get mixed . Also after filtering for the next 21 days keep the lid of the bottle loose, So that the gas escapes, otherwise when you open due to the gas present it will spill.

      I have never tried with jaggery .. but adding jaggery will change the taste of the wine, because jaggery and sugar have their own distinctive taste. Personally I will suggest to follow the recipe as it is to get the desired results.

      sudhir Goud For certain fruits like grapes fermentation is possible without yeast . This is a homemade wine made with natural ingredients. I don’t know how much percentage of alcohol is there, but less then commercial wines.

      LadyLight This recipes is tested and perfect for Grapes. Always follow the recipe as shown to get the desired results. Wines with different fruits can definitely me made but there may be little bit variations in the making process as well as in the ingredients. So always it is better to follow the specific recipe so that you end up with the perfect result.

I hope you are stirring it daily without fail otherwise fungus will form .. what exactly is the problem . It should smell really good ..with each passing day it smells more like wine ...

It smells really good but I think it smells little sour bcoz on the 4 th day I saw a grape had a fungus or white cotton like structure on it so I removed it as soon as I saw it. Will it get spoiled or have bad taste after 21 days?

      No need to keep in fridge .. keep in room temperature .. stays good for 1 year .. Theses are home made wines .. so make in small quantities..

      Wine banane ke liye kaafi intezaar karna padta hai. Yeast nhi bhi daaloge, toh bhi angoor ke andar ka yeast khud hi kaam karna shuru kar deta hai.

      ARK OF NATURE After filtering, keep the wine in a glass bottle for again next 21 days without shaking the bottle and also keep the cap loose so that the gas forming can escape slowly. You can close the cap once this 21 days is also over . During this 21 days the residue settles and the liquid starts getting clear . As it ages the the taste improves . Once the liquid clears you can start drinking . Do remember that as it ages the taste improve, so does the color.

      Yeast continues fermenting the sugar until it is used up, or until the alcohol content rises high enough to kill the yeast. The strains of Saccharomyces yeast used by professional winemakers can survive up to about 14% alcohol (by volume, or ABV). But alcohol is barely tolerated by bacteria and most other fungi (apart from Saccharomyces), so even modest levels are enough to suppress spoilage. Beer (at 4-5% ABV) is also fairly stable. @@cameronjones7747

      We are not adding any alcohol. As it ferments a small amount of alcohol will be formed. The percentage may increase with the storage period . But less then commercial wines.

      Santosh Bhatt It is not advisable to use plastic jar because due to fermentation process chances are there for plastic to react. It is alway better to use ceramic or glass jar .

    I new a acquaintance that made wine if I remember correctly he said he used equal amounts of grapes and sugar but no grains and I tell you what this wine would knock you on your ass, my wife is a professional drinker if you know what I mean and she drank a 16 oz. Glass of his wine and put her on her ass she was still drunk the next morning

      Agree with you. The experts from wine making countries suggest avoiding fruits and grains together. Just few days ago I completed rice and raisin wine. I thought I can drink 750ml of this as usual without getting drunk but I got drunk with nearly half quantity. It had effect till the next day noon. Phew! 24 Hrs intoxication.
      I won't do this again.

      Wine never exceeds 20% abv. Even 18% is rare. Yeast can only tolerate alcohol to a certain point. No way in hell is wild yeast going to be very resistant to alcohol.
      I don't think your wife is that big of a drinker. That's a good thing.
      However, 14% abv is already very intoxicating for 16 fl oz, which is the equivalent of one Four Loko.

      smart k This is a homemade wine.. I don’t know how much percentage of alcohol will be there . But for sure negligible as compared to commercial wines.

      10-12% if you are using bread yeast. Little less than commercial wine.

      @@Dave_en bread yeast can tolerate that much alcohol? I thought you'd be lucky to get around 5%.
      I also thought the average wine was usually below 10% abv, just like the average beer is 4%.
      Wine yeast tolerates alcohol much better, and they use only get 12-18% abv.

      @@m_i_g_5108 you can easily get around 10% alcohol without much effort using bread yeast. Once I got even 14% with a batch by step feeding and degassing twice daily.
      But the problem is you won't get quality aroma using bread yeast.
      So commercial yeast such as EC 1118 or 1116 is more preferable. Agree to your point that it's difficult to achieve 18% but ABV around 12-14% is the sweet spot. Even upto 15% is somewhat good.
      I ocasionally drink, so made 15 litres of pure grape wine which is enough for more than a year. I have decided to use 7.5 litres batch A this winter and 7.5 litre batch B for winter 2021-22.

      @@m_i_g_5108 In our place average wine is around 13% and beer is in the range of 5-8%. So depending on brand and product line you can choose as per your preference.
