    I make this with just the 2 cups of cheese not the parmesan. To make it a meal adding cooked chicken chunks and broccoli and Italian seasonings flakes for more flavor. I have also made it with ham or kielbasa and bag of frozen mixed vegetables. We do gluten free bread crumbs on top or have left it with no topping and it turns out good. Very versatile recipe! 🙃

    I have made virtually the same recipe for many years but we’ve always called it Hashbrown Casserole. The difference is I’ve always used cubed frozen hashbrowns that have been thawed in the fridge first (stirs much easier and bakes a little faster). We only top it with more shredded cheddar cheese and we do not add Parm to it. Delicious!

    we have smorgasbord at my chruch every year & everyone brings their own version of either this exact cornflake potato casserole, jello fruit salad, rolls, and cinnamon tortillas. the church provides the Swedish meatballs! then theres just around 6 tables of buffets. :)

    As another idea, instead of cornflakes you can use French Fried Onions. Delish!

    Whenever you make a potato dish with sliced potatoes, ALWAYS boil them for about 10 minutes first...it saves SO MUCH TIME and guarantees the potatoes will be nice and tender. I've made PW's recipe a few times and that trick has saved so much time. Paula Deen has a recipe called "Farmer's Potatoes" - pork chops on top of potatoes and gravy and onions - I use the same trick for that one.

    I make this recipe for Easter and Mother's Day usually. I let the hash browns thaw in the fridge overnight first so it mixes better. Also I usually add about a cup of milk so it's a bit creamier. I've tried corn flake crumbs that you can find at Walmart on top too but the crushed corn flakes are better:)

    I like to add scallions instead of reg onion and the diced potatoes. I made this for a Memorial Day party yest and it went superfast. Tfs your recipe

    Looks yummy! Growing up in the south, I've never seen this recipe made with any sort of topping, so I can't wait to give that change a try! I usually mix my entire pan of potato casserole together and freeze. I make several pans for the freezer to have on hand for events around thanksgiving and Christmas time. Then I can just thaw and throw in the oven the morning of the event. So easy!

    I use cream of chicken soup w herbs, french onion dip (sour cream based), 3/4 stick of butter, 2 cups sharp cheddar, and top it with reduced salt crinkle chips. Season w salt and pepper, garlic powder, smoked paprika and a little cayenne.

    I can’t remember what holiday it was last year but we had my husband’s entire family over for dinner and I was so well prepared ahead of time! Everything was going soooooo smoothly. Until I noticed ( 10 minutes before the turkey came out ) that the crockpot with my awesome au gratin potatoes wasn’t even plugged in 😫. I looked at my daughter and whispered ohhhhhhh noooooooo! Thankfully we put them on the bbq, put the turkey on hold and everything worked out fine 😊😂

    I have never used hash brown potatoes in this…I’ve always used a small dice red potato with the skin on. I add diced ham and top it with Panko with seasoning and yes more cheese. When served I top with green onions

    I've been making this recipe for years. I use the country style hash browns instead. Otherwise, I do everything else the same, except for the Parmesan. That looks amazing. I'll have to try it.

      +MustardSeedish Country style means cubes of potatoes, right? I've never made it that way, but I'd like to next time! I'd pretty much like any potato if it has cheese and sour cream on it though 😁

      Yes, it's the cubed. Sometimes I use the kind with peppers and onions. Both are great.

    They are a "Utah mormon" dish, called funeral potatoes because they are taken to funeral luncheons by sweet little ladies. Can be topped with buttered Ritz crackers, or those crunchy French fries onions, or just extra cheese.

    If you make ahead and refrigerate you want to leave on counter 30 to 40 min prior to baking or they will take longer to cook. They will be too cold direct from fridge. Or cook 15 to 20 min longer.

    This is a great video - am skeptical of the corn flakes, but like the idea of a new crunch.
    Makes me think "Chex Mix" toppings - Rice, Wheat, Bran Chex, or Crushed Pretzel Knots.
    Also, I did a 50/50 mix of Ritz/Cheddar - turned out fantastic and I didn't have to worry about browning - the browning aspect really brought out the buttery taste of the Ritz crackers and the Cheddar added a heartiness beyond simple zest.
    I will probably do a variation of your Funeral Potatoes for XMas 2018. Thanks for Sharing!

    The first time I made this was a huge fail. I didn't know I had to cook the potatoes first. I thought I could just pop the raw ones in the oven. But they turned black! And I took them to a church dinner and didn't realize they were black until I spooned in to them! I hid them under the serving table. Lol

    we make a funeral soup aka hamburger soup from the Best of Bridge cookbook. It is another one of those comfort dishes that you can make double batches and leave in a crock pot on simmer so people can just eat it whenever. That is a wise thing to do test the recipe before the big day. Great video.

    This looks so good. I must admit though that it's the name that initially got my attention. If I wanted to freeze this would it be alright to add the cornflakes before freezing or would they be best added just before baking? Thanks a lot.

    My aunt makes these but she calls them German Potatoes. She uses the country style cube-shaped hash browns in her recipe.

    If you put your onion in the fridge for a couple of hours before you grate them it is easier on your eyes.

    My mom has the recipe that's amazing it's way better I can get the exact measurements if you want to do a comparison video. Frozen hash browns, half and half (small size), cheddar lots like 2 cups, Canadian bacon or cubed ham steak. Salt pepper to taste... mix all And too with more cheese 🧀

      The Family Fudge It has cheese on top at crackel barrel. They call it hash brown casserole. It is so good. I cook mine with cheese on top and make sure the cheese crisps up. But isn't as crunchy as corn flake or bread crumbs would be.

    Mixing it up in advance seems risky, I could see the grated raw potatoes turning black after they defrost.
    Edit: it should work ok if you parboil the potatoes first.

      50hellkat2 its not new trendy or meant to be funny. In utah these are often served at lds funerals.. hence the name. No need to get so offended
