Authentic Pierogi Ruskie (Polish Cheese and Potato Pierogi)

These Authentic Pierogi Ruskie (Cheese and Potato Pierogi) are delicious and so easy to make! After trying these pierogi, you will never want to buy store bought pierogi, ever again. Pierogi are super easy to make and freeze really well. Make them once and enjoy many times. Top the pierogi with bacon, onions and sour cream and you can be sure that people will asking for seconds!
Dough:
4 cups (500g) flour
1/2 cup (120ml) hot water
1/2 cup (120ml) milk
4 Tbsp butter
1/2 tsp salt
Filling:
1.1 lb (500g) potato
1 lb (460g) twarog (Quark or farmer's cheese)
1 tsp salt
1/2 tsp pepper
2 Tbsp Ghee
1 medium onion (~150g)
