Disclaimer: I disabled "Only release the oldest instance of a note upon note-off event" when rendering the audio in order to reduce reverb.
It turns out I'm not the first to use a Yamaha C7 soundfont on this MIDI - at least one other person has done that already. But it's pretty clear the audio in that video was rendered without a limiter because it got pretty loud and messy at some points (I'm not mentioning the video or who made it because I don't want anyone to get harassed).
I had to re-render the audio a few times because Keppy's MIDI Converter's real-time simulation mode is finicky and is prone to rendering audio with skipping or clipping for the first split second. Also, real-time simulation mode caused the audio to cut off at the end, so I applied a quick fade to the end of the audio to make the cut less apparent.
