I was a chef in a fine dining restaurant for over 18 years and it absolutely is the chefs responsibility to make sure the food stays at safe temps and ALL surfaces are clean at all times. Product rotation and date labeling is crucial in keeping people safe from foodborne illness. Its hard for me to watch this show because I literally yell at the screen and cringe the whole time. I still love watching though.
My parents are chef and everytime they cook, they CLEAN! LOOK IN THE FRIDGE AND CLEAN IT! And I'm talking about our house kitchen. They always told me "after you finish with something, you clean it"!! I always clean after I cook, the stove also, or even during Im cooking. Multitasking and hygiene is important!

I had food poisoning recently. Couldn’t rehydrate fast enough and had to be hospitalized. My arms and leg went numb and I had to scream to my neighbors for help. I couldn’t even reach my phone. They called my mother and she took me to the emergency room at 2am. Not only that, but that trip cost me $2000. I have a new dream to become a health inspector and improve my community by making sure this doesn’t happen anymore

After I left, and my mom , who was a cook, a new cook was added and her 7 YEAR OLD GIRL. The girl was running in the kitchen with no shoes, rubbing her nose, cooking her own food, never washing her hands, leaving her food on the tables and leaving it ,plates and bowls with moldy food IN THE CABINETS WITH THE EQUIPMENT AND RAT DROPPING EVERWHERE..... We went back a year later and it looked awful. My dad knew the inspector and the resturant was owned by a fam friend so were cleaned it and taugh the lady how to run it, but the girl was the big issue. The girl treated it like her home....Her home must be absoulty disgusting. 3 HOURS before we left agian they were already violating health codes. ATM, the place is still running but about to be shut down.

It's just nasty; no one should work in a kitchen without a food handlers, and they shouldn't have their food handlers if they act like that. When you get it, you learn washing your hands is basically rule #1: always wash your hands. #2: keep a sanitary kitchen- wash everything, routinely every half hour. *It's NOT HARD!*

You gotta be tough WHEN YOU HAVE PEOPLES LIVES IN YOUR HANDS. The cook is responsible for maintenance and making sure the food is properly stored, prepared and from start to finish a quality product. He could have made small changes daily that would have resulted in a way better kitchen.

I was a cook in my 20s for around 8 years. I’ve worked in classy hotels, dive bars, cafes, and a truck. It amazes me how things like this can happen. Every fundamental rule is demonstrably broken in this compilation. I hardly never seen these rules broken in my life, and I was cooking as a 20 year old kid. These amounts of irresponsibility is just, to me, an indicator that you should have never been cooking food for others at all in the first place.
Absolutely. I will say, this show really makes it seem like this is a common thing, but in the 20+ kitchens I have been in, I have only ever been witness to one cross contamination issue, and it was a kosher/non kosher thing.

It disgusted me and broke my heart when they had to throw all that meat away. I'm not a vegan, I LOVE chicken. But I do love animals and was raised with the mindset of "it died so you would not starve. Eat all of the meat." I don't eat beef but I respect that cows die to become the steaks and ribs and brisket others enjoy. So really sucks seeing so much wasted.
If you own a restaurant you should be expected to respect the meat/ animal food products you sell clean and fresh and not waste it; and if you did, you should be given a fine from police and fired.
@@ellendaniels8715 I think that the original comment was more so being critical with how the restaurant over ordered meat products, just for most of them to go bad. Good inventory management should be able to order appropriate amount of product so that food waste stays relatively low
Unfortunately the restaurant industry (especially big events) throws away TONs of food every day. My wife actually broke down while working at the Kentucky Derby and questioned her career as a chef when she saw how much food was thrown away every night while people went hungry on the street. Considering we are pretty much producing just enough food to feed the people on this planet there really needs to be controls on the amount of food waste in the industry.

It's why I always get something easy like grilled cheese or fries. Yeah it can be dirty but at least it's not poisonous meat (For places I'm not fairly certain with)
Honestly, I agree that the dog is not only the best asset but the only asset they have. That dog is showing 99% more ownership and care for the business than all the staff, including the actual owner.
What I like about Jon is that he chews out the useless managers while having the staff's back if they really put in an effort and try their best but are let down by their managers. We need something like this for office workers. There's plenty of useless managers who think they're god but couldn't find their ass with both hands if they had supervision.

This is the first time I've watched anything from Bar Rescue and already I can see that Jon is like Gordon Ramsay but twice as intense, especially when health issues are involved, which is probably for the best given the health issues that these places can cause.

Last year, I went to a "Hooter's type" wing spot. I watched a Cook, walk from the back wearing an apron and gloves. He grabbed a drink and, walked to the bathroom swinging a towel. He came out of the bathroom about 5mins later, still wearing the apron, gloves and now had his towel tucked into his pants. The Bartender went nuts on him and, he admitted to using the toilet while wearing his gloves but, he put his apron on the floor while he took a S%$T....🤣🤣🤣 By far, the most disgusting but, hilarious thing that has happened to me in a restaurant!!

I am really surprised that the chef from the golf bar didn't make this list. Because he was one of the worst cooks I've ever seen. He said he graduated from cooking school and then they show him cooking food on a nasty grill and their is mold growning in the coolers where they keep the food. The worst part about this is (simply because of it being a bar) how many people had gotten sick before chef did from the soup or absolutely any other food and assumed they got sick from the alcohol! When they measure bacteria I wish they would check it in sections for example a swab for cutting boards, a swab for handles (door/ oven/ etc) to see if they’re all the same
I think everyone who ever works in any restaurant position should have to go through the training they give you at Cracker Barrel. They don't mess around, and they train you for every position, regarless of what you were hired to do. By the end of it I knew more than I ever thought I could. Most importantly though, they taught me how to take pride in the work I did. It's actually an amazing place to work for, even if you only were to stay for the training. Its also probably the safest place you could ever eat at.

@@MysteryMortis They should all be that way. That's one of the most important things about working at Cracker Barrel. Everyone I worked with was great. I still have a lot of friends that I made working there. Alot of us became like family. It's a really great place to work.

Hi, Servsafe certified former chef here, produce in general and fruit specifically are actually the most likely thing to get you sick. They don't get brought to temp, aren't frozen even in transit, and are almost never washed to the extent they should be. And you don't "try" to wash your hands, it only takes a couple of months before you do it automatically once you're aware of when you should be. Which is very, very, very often. Pay attention to how many times you touch your face or hair today--a cook should never do it without washing her hands. It's a good habit to be in with COVID, too, or hell the flu. Hand washing literally saves lives.
I recall there are some chefs who can cook quite decently in some episodes, it's just the management that's the problem, they should do a video compilation on that even though it might be a little short
Every time I think he's being too harsh I remember that some of these people have gotten so lazy that their poor food conditions could potentially get someone sick, so it's a necessary evil.
37:19 Actually, the crickets thing is really common here in Mexico, it's also common than people that prepare them flavor them differently, liike saltad, spicy, etc. But we don't eat crickets only, sometimes tequila bottles come with a worm inside, more specifically the worm that comes from the plant that's used for tequila.
Many years ago I worked at a restaurant called Western Sizzlin. And I'm sure everybody has their Western Sizzlin story. After one month I was promoted to the salad bar manager. I told them I needed a digital thermometer in order to check temperatures of all of the items on the bar throughout the day. They told me that wasn't my job. So in the mornings when I came in I had my own digital thermometer and I checked the temperatures of everything and walk in that was going to be going into the bar that day. The temperatures in the walk-in over 50° and the olives literally burped at me when I walked past them. Our food cost went up and I was questioned about it and I said it's because I'm having to throw so much food away because of the temperatures in the walk-in and on the bar itself. But was not a refrigerated area on the bar it was just packed with ice and kale put in between the containers of food. Throughout the day the temperatures were checked by me I could not get the temperature below 50 degrees. Was literally turning sour sitting on the bar. The nuts that were there were Rancid AF . I did this for over a month begging for them to fix something because people were going to get sick and then somebody got sick and who did they want to blame it on me. Well I had a cassette recorder in my pocket and each time I went in to talk to anybody in the supervisor position I had that thing on and thank God I did because it saved my ass. The manager was fired, and a new manager came in but nothing changed. None of the kitchen equipment was never serviced and they could not come up with a better way to do the food on the salad bar to keep it from going bad. Fact it was already bad in the walking, and then told I had to serve it on the bar I was done I made a quick exit and contacted the health department. It didn't last long they were shut down within about a month-and-a-half
Scary because I LOVED Western Sizzlin’ when my area still had one. I never got sick and back in the day… I could EAT! I’d spend anywhere from 1.5-2 hours there, getting my moneys worth (and then some 😉) eating from the buffet. I hope my local restaurant was properly handling food but I’ve seen a lot of questionable stories that have me worried…

I don't. Don't apply for a job you're not going to take seriously. You ask during interview if someone is going to train you. If they say no or lie and you show up then it's up to you to educate yourself properly. Plenty of libraries with books on cooking.

This show taught me so much about food preparation. It trained me how to spot problems with a restaurant. In some cases before I even place an order.

I had food poisoning recently. Couldn’t rehydrate fast enough and had to be hospitalized. My arms and leg went numb and I had to scream to my neighbors for help. I couldn’t even reach my phone. They called my mother and she took me to the emergency room at 2am.

We went back a year later and it looked awful. My dad knew the inspector and the resturant was owned by a fam friend so were cleaned it and taugh the lady how to run it, but the girl was the big issue. When you get it, you learn washing your hands is basically rule #1: always wash your hands. #2: keep a sanitary kitchen- wash everything, routinely every half hour.

I was a cook in my 20s for around 8 years. I’ve worked in classy hotels, dive bars, cafes, and a truck.
It amazes me how things like this can happen. Every fundamental rule is demonstrably broken in this compilation. I hardly never seen these rules broken in my life, and I was cooking as a 20 year old kid. These amounts of irresponsibility is just, to me, an indicator that you should have never been cooking food for others at all in the first place.
Absolutely. I will say, this show really makes it seem like this is a common thing, but in the 20+ kitchens I have been in, I have only ever been witness to one cross contamination issue, and it was a kosher/non kosher thing.

It disgusted me and broke my heart when they had to throw all that meat away. I'm not a vegan, I LOVE chicken. But I do love animals and was raised with the mindset of "it died so you would not starve. Eat all of the meat." I don't eat beef but I respect that cows die to become the steaks and ribs and brisket others enjoy. So really sucks seeing so much wasted.
If you own a restaurant you should be expected to respect the meat/ animal food products you sell clean and fresh and not waste it; and if you did, you should be given a fine from police and fired.

Unfortunately the restaurant industry (especially big events) throws away TONs of food every day. My wife actually broke down while working at the Kentucky Derby and questioned her career as a chef when she saw how much food was thrown away every night while people went hungry on the street. Considering we are pretty much producing just enough food to feed the people on this planet there really needs to be controls on the amount of food waste in the industry.

The Bartender went nuts on him and, he admitted to using the toilet while wearing his gloves but, he put his apron on the floor while he took a S%$T....🤣🤣🤣 By far, the most disgusting but, hilarious thing that has happened to me in a restaurant!!

When they measure bacteria I wish they would check it in sections for example a swab for cutting boards, a swab for handles (door/ oven/ etc) to see if they’re all the same
I think everyone who ever works in any restaurant position should have to go through the training they give you at Cracker Barrel. They don't mess around, and they train you for every position, regarless of what you were hired to do. By the end of it I knew more than I ever thought I could. Most importantly though, they taught me how to take pride in the work I did. It's actually an amazing place to work for, even if you only were to stay for the training. Its also probably the safest place you could ever eat at.

Hi, Servsafe certified former chef here, produce in general and fruit specifically are actually the most likely thing to get you sick. They don't get brought to temp, aren't frozen even in transit, and are almost never washed to the extent they should be.
And you don't "try" to wash your hands, it only takes a couple of months before you do it automatically once you're aware of when you should be. Which is very, very, very often. Pay attention to how many times you touch your face or hair today--a cook should never do it without washing her hands. It's a good habit to be in with COVID, too, or hell the flu. Hand washing literally saves lives.

Well to be honest, much like Gordon Ramsay, Jon Taffer hasn't yelled at anyone who didn't 100% deserved it 🤷🏽♂️
Every time I think he's being too harsh I remember that some of these people have gotten so lazy that their poor food conditions could potentially get someone sick, so it's a necessary evil.

37:19 Actually, the crickets thing is really common here in Mexico, it's also common than people that prepare them flavor them differently, liike saltad, spicy, etc. But we don't eat crickets only, sometimes tequila bottles come with a worm inside, more specifically the worm that comes from the plant that's used for tequila.

Many years ago I worked at a restaurant called Western Sizzlin. And I'm sure everybody has their Western Sizzlin story. After one month I was promoted to the salad bar manager. I told them I needed a digital thermometer in order to check temperatures of all of the items on the bar throughout the day. They told me that wasn't my job. So in the mornings when I came in I had my own digital thermometer and I checked the temperatures of everything and walk in that was going to be going into the bar that day. The temperatures in the walk-in over 50° and the olives literally burped at me when I walked past them. Our food cost went up and I was questioned about it and I said it's because I'm having to throw so much food away because of the temperatures in the walk-in and on the bar itself. But was not a refrigerated area on the bar it was just packed with ice and kale put in between the containers of food. Throughout the day the temperatures were checked by me I could not get the temperature below 50 degrees. Was literally turning sour sitting on the bar. The nuts that were there were Rancid AF . I did this for over a month begging for them to fix something because people were going to get sick and then somebody got sick and who did they want to blame it on me. Well I had a cassette recorder in my pocket and each time I went in to talk to anybody in the supervisor position I had that thing on and thank God I did because it saved my ass. The manager was fired, and a new manager came in but nothing changed. None of the kitchen equipment was never serviced and they could not come up with a better way to do the food on the salad bar to keep it from going bad. Fact it was already bad in the walking, and then told I had to serve it on the bar I was done I made a quick exit and contacted the health department. It didn't last long they were shut down within about a month-and-a-half
Scary because I LOVED Western Sizzlin’ when my area still had one. I never got sick and back in the day… I could EAT! I’d spend anywhere from 1.5-2 hours there, getting my moneys worth (and then some 😉) eating from the buffet. I hope my local restaurant was properly handling food but I’ve seen a lot of questionable stories that have me worried…

I don't. Don't apply for a job you're not going to take seriously. You ask during interview if someone is going to train you. If they say no or lie and you show up then it's up to you to educate yourself properly. Plenty of libraries with books on cooking.

lack of training is one thing, i knew to wash my hands while cooking with raw meat when i was five years old, it's common sense
