Troy back on the farm growing up we had hogs but they didnt get old chickens. The older tough birds got processed and canned that takes not only toughness out but makes the meat moist. Open up a jar of chickenheat it up with some potatoes and gravy. Now that is a serious meal anytime but especially good on cold winter days. Canning will tenderize the toughest meats and make it yummy and like you said alot more flavorful. My guess is being you market meat you could likely market canned chicken. Afterall canning is the safest form of. I market canned good although not meat we make applebutter, jams, jellies and syrup. There is a growing demand for homestyle canned goods.

We have a weekend in late fall, we kill skin and pressure cook it in the evening, let it cool in the cookers overnight then cook soup and can it the next.
simple, each year you get chicks you put a colored band on there leg for that year, and when they hit 3 years old it is simple all the ones with the color band from 3 years ago, off with the head and bag um in feed bags and you have a line up of people paying you 2 bucks a bird,, only head off, i use a heave peace of wire about 4 feet long and bend a hook on one end and bend the wire so the hook rides flat on the ground, and you dont move, you move the wire hook along the ground and hook one by one by the leg just above the foot, and pull them up side down, very fast and no bending over,, old coat hangers work best, i feed a lot of them to my pigs, they love them and clean up everything
My mom used to butcher older free range hens for dinner. I didn’t know that the chicken meat could be tender until I ate one at a restaurant. I prefer rabbit meat from the yard over chicken any day of the week.
I can relate Troy, I never killed a chicken in front of my little ones either, they hated finding out the rabbit never escaped either.. bad day for dads that day for sure. I never in my life ever expected this one though. I was figuring on eggs but in the chicken house but, they never laid. So when investigating some more I found out they were too cold out there. So being the kind guy dads are I penned them under my stairway up to the back of the house, it was all boxed in so tight that I had to run a coule heat lamps cause we were getting a real cold spell. Now this was only going to be a day two tops. I was working my little hobby ranch and working ten to twelve hour days in the woods (logger) and sure enough I checked on them day three, they had all the fresh water and feed so it kinda windmilled into a week. I go out and out of curiosity check them before building and to be honest, I was tired with never having even one day off. I opened the door and these are fairly social chickens and they come right up to me and I'm looking about to see how much poo that I'm going to have to pressure wash out and regretting putting them there. What I did see floored me. I gathered up a large bucket and dang near filled it collecting eggs. They were not only laying but it looked like about a two a day!!! I had eggs running out my well you know. I left things as was as the kids can gather eggs and I will tear down stairs in spring and move them to their own house again. They did finally slow down but I figured that cause the heat lamp was on they were not doing much time in their nests as they were eating well enough. I figure that is my best one so to me it was great Troy to remember old times

I am thinking of building a chicken coop for about 4 or 5 chickens , I’m trying to weigh the expense of feeding and caring for the chickens with the benefit of fresh eggs , the question of what to do with them after they stop laying crossed my mind , I can’t get a consistent average for laying age and slaughter age for eating the chickens , everybody has different breeds , so if I may ask you a question , do you ever slaughter the laying hens before they are too old to eat ? It seems after 2 years the chicken is too old , is that correct ? Thank you for the video , I think you would be a good neighbor to have .

Course at least 1 would usually go straight to me...she was a leader and like to be held and around me.
What is NOT HUMANE about this farmer is killing these chickens thoughtlessly in front of the other chickens. If someone gathered him, his wife, his parents, his children together and a few if his neighbors and friends in the living room of his house and slowly, one at a time cut his wife's throat, bled her out, cut his son's throat, his mom's throat... bled them out and let him watch and hear it he would claim it doesn't upset him. He would be a liar to say it didn't upset him. So - As a murderer, do every animal a solid courtesy since they are being killed and take one at a time into a closed off area, where no other animals can witness this Natzi-like beheading of Biblical proportions and have dignity for the creature and their years of prior service of eggs to you and your family. Be a higher quality of human being. Do you have a responsibility to be a better person?
He make the others watch the processing so all that cortisol is released right before their last breath. I would not eat those chickens as the effects of cortisol / stress hormones can be seen on the farmer’s stomach. You become what you eat.
Allowing sows to eat meat/blood meal will also help prevent a sow from eating their piglets if they have any. There was an old man around here that would go periodically to the sale barn and buy an old mule or horse that was destined for the glue factory and he would buy it, take it out to the hog lot and dispatch it, word of the day I guess, and let the hogs have at it... not a tooth or hair left in the lot in short time.
A guy I worked with told me when his chickens would not lay eggs he would put out a KFC bucket in the hen house. Funny he never really said how well that worked.

Pressure can the meat and it will come out tender. Old birds also make the most flavorful broth. You can pressure can that as well.

My Grandfather taught me how to do this when i was a kid many many years ago using a chopping block and an ax. Them buggers would flop around and run.

Interesting. They clean up the deer carcasses pretty well around here during deer season. Bones and all.
